Single-Serving Chocolate Oat Cake

Okay friends, I think it is time. I eat this at least 2-3x a week and I still haven’t shared the recipe on here. Truthfully, it is in my eBook (along with lots of other budget-friendly recipes!) But everyone needs it… so here we go. This is my favorite favorite favorite mug cake recipe ever! It’s great as is, but I do love serving it with some banana nice cream for an extra treat. You can eat all the cake and ice cream you want when it’s made with nourishing whole plant-based foods. x


Recipe

You will need:

  • Mug of your choice
  • 1/2 banana, mashed
  • 1 tbsp maple syrup
  • 1 tbsp PB2 powder (or regular peanut butter)
  • 1/4 cup almond milk
  • 1/2 tsp baking powder
  • 2 tbsp unsweetened cocoa powder
  • 5 tbsp oat flour
  • Handful of vegan chocolate chips (optional)

To make:

  • Add wet ingredients to your favorite microwaveable mug and stir until well combined. Add dry ingredients and stir until there are no lumps.
  • Microwave for about 2 1/2 – 3 minutes, or until fluffy!
