Plant-Based Meal Ideas: What I've Been Eating Lately

Hi friends!

A simple recipe to share with you all today but I wanted to have a permanent place for it because I often share photos of these creamy blended oats. They are so very easy and quick to make and my entire family enjoys them. They are the perfect fiber-fueled, plant-based breakfast that keeps bellies content for hours. A beautiful start to your day.

Plant-Based Meal Ideas: What I've Been Eating Lately

Recipe

Makes 2-3 servings

You will need:

  • 1 cup oat flour (just blend up your rolled oats)
  • 1 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1 mashed ripe banana OR 1 tsp maple syrup (optional sweetener)
  • 1/2 tsp cinnamon
  • Sprinkle of: nutmeg and cardamom

To make:

  • In a pot over medium heat, add oat flour, milk, extract, sweetener choice, and warm spices. Stir well until blended and continue to stir until thickened. I wouldn’t leave this alone on stove and would continue to stir because it thickens quite quickly (maybe about 3-4 minutes or so).
  • Pour into bowls and top with your favorite toppings.

For toppings, we tend to stick with berries, almonds or pistachios, a drizzle of maple syrup, or sometimes a nice decadent drizzle of chocolate date syrup. I make that syrup by mixing date syrup with unsweetened cocoa powder and a splash of non-dairy milk. You can also use maple syrup. It’s delicious! But anything goes for toppings, so go crazy. x
