Fast and easy dinner time! If you know me, you know I love a good pasta dish for dinner that comes together in under a half hour. That’s what this broccoli & chickpea pasta dish is. It has a grain, veggie, healthy fat, and protein/iron source. It’s everything you need in a dinner for your fam. I hope that you enjoy it as much as we do.
Recipe
You will need:
- Pasta of your choice
- 4 tbsp olive oil
- 4 cloves of garlic, minced
- 1-2 cups of broccoli florets
- 1 cup cooked chickpeas
- 1 tbsp nutritional yeast (optional cheesy flavor)
- Salt and pepper, to taste
To make:
- Cook your choice of pasta according to package.
- While pasta is cooking, heat olive oil up over medium heat. Add garlic, broccoli, and chickpeas and toss until well coated. Turn heat to low-medium and partially cover until broccoli is cooked.
- Once the pasta is done simple add to your broccoli/chickpea and season with nutritional yeast, salt, and pepper. Toss until incorporated and serve!
