Hi friends – sorry for the crickets but it didn’t feel okay posting about food and lifestyle last week. It was a week of a lot of reflecting, researching, donating, reading, and listening to black voices. I talked about my feelings more on IG, so I won’t go into it too much here, but I am going to do better. I now realize how little I knew and I feel ashamed of myself. This year is the year of a lot of change and movement. It is uncomfortable, yes, but it has been a long time coming.
I’m home with two young kids and am unable to physically protest but there are still things you can do. I found this article helpful – 75 things white people can do for racial justice.
Joe and I also discussed how we are going to educate our girls on racism and white privilege. I have been searching for children’s books to add to our library that celebrates diversity, talks about injustice, and highlights black history (and other cultures, too). I can compile a list of those if you guys are interested, too.
So please – I encourage you to do some Googling and find where you can donate and sign all the petitions. Find ways you can help, even it is from your home.
I am not sure how to even transition into the content of this post, but here we go.
I’ve been pretty lazy with meals lately. I’m sure you can relate (right?) With two little girls keeping my hands full, I feel like I am constantly serving – meals, bottles, snacks, etc. So when it comes to serving myself, I tend to be a lot lazier and every meal is as quick as it gets.
I thought it might be interesting to see exactly what I eat on one of these particularly lazy days and maybe you’d also find it interesting.
I mean it… this is nothing fancy. It is as real as it gets. I photographed most of what I ate but some of the snacks were just picking here and there (I took notes) so I’ll include anyways. Just for some background – I am still nursing, not dieting, and drink water all day. I try to eat mostly whole foods most of the time, but I am not perfect. So here’s a very realistic look at what a busy mom of two eats in a day. AKA lots of snacks.
Breakfast
I always start the day with a huge glass of water before eating anything. I followed up with some cereal. I’ve been very into Special K Berries. Some mornings I make a breakfast sandwich or oatmeal, but on this very lazy day, cereal was it. And with almond milk.
Mid-Morning Snacks
Willow and I both had some orange slices & avocado. I had my avocado with hot sauce.
Lunch
Again, Willow and I both had hummus & cucumber sandwiches. I mostly eat whatever I am making for her to keep it simple. I also had bread & butter pickle chips and carrot sticks with more hummus… forgot to take photo.
Afternoon Snacks
I forget to take pics of these because I just grabbed quickly but when the girls were napping, I had a mocha latte, banana, and a handful of dark chocolate chips while lying in the sun. It was glorious. Here’s a pic of what my mocha usually looks like (but pic taken on another day).
Dinner
This is lazy dinner because all I had to do was make the salad and baked potato chips. My husband grilled the Beyond Meal burgers – weeee!
Before Bed Snack
Most nights, I will either have some fruit (especially oranges) or popcorn. Popcorn with lots of nutritional yeast = life. And that’s what I had tonight.
I know, pretty boring. It’s kind of all over the place. Lots of snacks, mostly fruit. Not a whole lot of vegetables today, but to be honest, some days are better than others. One day I’ll eat cups and cups of steamed kale and the next day, it’s just potatoes and baby carrots. I do my best to keep it balanced!
