I’m sharing a large compilation of food inspiration. These are average meals that aren’t too fancy and easy to enjoy. I hope you find inspiration here.
Air-fried oatmeal cookie topped with chocolate chips and PB. I simply make this recipe and shape into one big giant cookie then air fry for about 10 min or so.Dinner of mashed potatoes, asparagus, salad, rosemary butter beans, and balsamic tofu.Creamy blended oats with strawberries, pumpkin seeds, walnuts, and drizzle of maple syrup. I like to make my oats with soy milk for an extra protein boost.Rice cake snack topped with buffalo chickpea salad, avocado, and cashew ranch dressing.Chickpea oat pancakes with blueberry compote.More buffalo chickpea salad on a GF everything bagel thin (O’Doughs is the brand), red cabbage, lettuce, tomato, avocado, and cashew ranch.Living for summer rolls!! I love mine best with mango and avocado. The combination is *chefs kiss!*Creamy oats again with blueberries, pumpkin seeds, and walnuts.Large refreshing salad with lettuce, tomato, cukes and topped with more of that buffalo chickpea salad (seriously so good) and a drizzle of cashew ranch and hot sauce.Garden romaine topped with chickpea salad, red cabbage, carrots, avocado, sauerkraut, red pepper flakes, and sesame seeds.Vanilla yogurt (Siggis plant based is my new favorite) with mango and crushed almonds.Avocado toast and nectarines… which have been my favorite fruit this season.Rice with Cajun Daring chik’n and garlicky kale for dinner.Chickpea pasta with summer squash and zucchini, garlic, olive oil, crushed walnuts, nooch.The beginnings of my favorite kale salad. Love walnuts and cranberries in it.We missed u-pick strawberries this year but we did make it for raspberries… so raspberry shortcake it is! I’ve been in a cold cereal mood all summer. Bananas and soy milk with it.Rice, broccoli, and Daring teriyaki chik’n. I have been loving these because they are GF and have a nice iron boost.Chocolate oats with a little Kite Hill Greek yogurt, berries, pumpkin seeds, and walnuts.Burrito bowl with brown rice, corn, black beans, lettuce, tomatoes, cashew cream, and hot sauce.Nacho night! Homemade corn tortillas, pinto beans, vegan queso, cashew cream, lettuce, tomato.PB mug oats with a side of Greek yogurt, banana.Kale salad with carrots, walnuts, golden raisins, lemon tahini dressing.Greek yogurt with frozen raspberries, granola, and drippy PB. YUMMMM.Brown rice, lentil, and quinoa bowl with roasted cauliflower, tahini, and sriracha.PB mug cake again with extra PB on top and raspberries.Yogurt granola and berry bowl. Can you tell I am a creature of habit most days? My usual kale salad with a side of edamame.GF pasta with peas and tofu. A little tahini/nooch/salt/pepper.Same yogurt deal.Oatly is my favorite non-dairy ice cream, hands down. All of the flavors are hits. I just love a good classic ice cream flavor!Lemon tahini kale salad tossed with quinoa and a side of roasted potatoes.I made a lentil/walnut taco meat and enjoyed that as a salad with all the toppings. I love using Kite Hill Greek yogurt as my sour cream. So refreshing and lots of protein.Chocolate oats with strawberries, walnuts, chia seeds, and some vanilla Greek yogurt. Date/PB/Chocolate frozen treat. I am addicted to these.Banza chickpea pasta with garlicky rabe and walnuts. This has been my favorite combination lately!Yogurt, banana, granola, walnuts.My on the go snacks these days… always a piece of fruit and a Misfits protein bar.Delicious oat chickpea pancakes topped with yogurt, berries, pumpkin seeds, syrup.Rice with air-fried tofu, cucumber, and avocado with a spicy PB2 sauce. For the sauce, I usually do some PB2 powder, water, sriracha, lime juice, and a little maple syrup.Mashed potatoes with air-fried “cheesy” zucchini (tossed with nutritional yeast, salt, and garlic powder). A little white bean/cashew cream blend on top.Creamy cardamom oats with bananas, strawberries, almonds, and maple chocolate syrup.Chickpea pasta tossed with zucchini and nutritional yeast. Similar recipe here.Black bean and corn tostadas topped with vegan queso, cashew cream, hot sauce.Kite Hill Greek yogurt topped with granola, mango, raspberries, and pumpkin seeds. My favorite granola brand is Purely Elizabeth!My favorite kind of dessert ;)Chickpea, golden raisin, and apple salad sandwich. For GF bread, I like the brand O’Doughs!More tostadas but these are topped with a crumbled tofu/pinto beans taco base with cashew cream, guac, and salsa.Chocolate banana ice cream with some cooked oats and almond bits.Jasmine rice bowl with sauteed bok choy and edamame.Greek yogurt with berries and some GF cereal for crunch.Brown rice and veggie stir fry.Quinoa with cooked veg, edamame, coconut aminos, and sesame seeds.Love these PB oat bars with chocolate and nuts. I keep them in the freezer at all times. I like mine with refried beans, queso, cashew sour cream, guac, hot sauce. Side salad.This is THE BEST vegan chocolate I’ve had in a long time. Love having a square or five. LOLTostada’s topped with beans, queso, cashew sour cream, guac, hot sauce, lettuce…My favorite ever. It’s like lava cake and ice cream… but good for you.Brunch with family. I had a vegan sausage, just egg, and cheese wrap with a side of rice paper bacon. So good.Broccoli and rice with spicy PB2 sauce. I just mix some PB2 with water, sriracha, lime juice, and a bit of maple syrup.Cauliflower, sweet potato, and red lentil curry over rice.More of my favorite breakfast. ;)Cabbage, carrots, and chickpea in a creamy tomato broth. I love to make a batch of this soup to have throughout the week.Homemade black bean and mushroom burgers on a GF bun and side of fries.Tofu and vegetable curry over rice.Toast with vegan cream cheese, tomato, red onion, and cucumbers with a side of veg for breakfast.
