Peanut Butter and Banana Chip Oats in a Mug

Hi friends!

An easy breakfast recipe for you this morning so you can upgrade your usual oatmeal. I have to admit, I haven’t eaten traditional oatmeal in a while because I am all about these baked mug oats. A have a few different variations I cycle through, but these have been a staple for months now. They come together in under 10 minutes and my kids also enjoy them, so another win. I hope you guys enjoy, too.

Our mornings have been slower this season and it’s what we have all needed. Slow mornings with an easy breakfast so I can sit and enjoy with my kids and read to them… that’s the life.

This will be the only post this week. I’ll be enjoying family and friends for the holiday. My husband is off for half the week! Wee! Have a beautiful Thanksgiving – see you next week. x


Recipe

You will need:

  • 1 tbsp maple syrup
  • 2 tbsp mashed banana (or pumpkin puree or unsweetened applesauce)
  • 1 tbsp peanut butter
  • 1/4 cup almond milk
  • 5-6 tbsp oat flour (simply blend rolled oats to make)
  • 1 tbsp ground flaxseed
  • Handful of vegan chocolate chips

To make:

  • In a mug, add maple syrup, pumpkin/apple puree, peanut butter, and almond milk. Whisk under well combined.
  • Add oat flour, ground flax, and chips. Stir until there are no lumps of flour.
  • Microwave for 3-4 minutes (or until firm).
  • Allow to cool a bit before digging in. Enjoy!

  1. I just made this and I’m super excited to make it regularly for myself since I tend to skip breakfast! Is it supposed to be called chocolate chip (no bananas in the recipe)? Thanks for this great recipe, I love that there are no dishes!!!!!

    1. Oh my gosh! It was supposed to be mashed banana instead of pumpkin puree LOL thanks for the catch! You can do either or… I do prefer banana the most but pumpkin is also sooo good. I edited it. x

      1. Hahaha well that makes sense!! I used pumpkin purée and it was great but bananas are even better since they’re always on the counter. Thanks for clarifying:)
