Vegan Potato Chickpea Curry (Oil-Free)

If you follow me on IG, you may have noticed my slight obsession with Indian food lately. I feel like I am eating curry at least once a week… and I am not complaining. Neither is my husband. He was really into this dish and it has since become a bit of a staple this season.

When I posted this photo, a handful of you guys wanted me to share the recipe. Ask and you shall receive!

With just a few simple ingredients (and budget-friendly, might I add) you can enjoy this same curried dish. Hearty, healthy, flavorful, protein-packed, oil-free… it has it all. I hope that you enjoy it as much as we do in this house.


Recipe

You will need:

  • 4-5 potatoes, cubed
  • 1/2 sweet onion, sliced thin
  • 1 clove of garlic, minced
  • 1/4 cup of water (to avoid sticking on bottom)
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • Dash of: onion powder, salt, pepper
  • 1 can chickpeas
  • 1/2 cup peas

To make:

  • In a pan over medium heat, add cubed potatoes, onion, garlic, and about 1/4 cup of water. Cover and allow to cook a bit – for about 5 minutes or so.
  • Add curry powder, turmeric, onion powder, salt, pepper, and chickpeas. Give it a good stir to make sure everything is coated. Turn heat down to low, add more water if sticking to bottom, and cover. Let cook for about 15-20 minutes, stirring occasionally and adding water to prevent sticking.
  • Once potatoes have softened up a bit, add in your peas and combine again.
  • Keep heat on low and cover up – let cook until everything is softened and you can gently mash up with a fork (not completely). Be sure to scrape the bottom of pan to get any flavorful bits that stick.
  • Serve with a side of rice!

Well friends, I am off. This season of life has been pretty busy on our end, but I am happy that I am able to put together recipes and posts for you guys regularly. Recipes are a bit tougher at the moment, but I know I’ll have more time after the hustle and bustle of the holidays. Finding the time isn’t always easy, but I enjoy making it a priority.
