Vegan Cherry Almond Granola

Granola day! I feel like I post photos/stories on IG of this granola a lot but have never shared my recipe. It is beyond easy. I usually make it during my weekend meal prep and then we have it for the week and beyond.

My favorite way to enjoy it is usually with milk and some fresh berries but it’s also great to top on yogurt, oatmeal, or something I will slice an apple with peanut butter and dip into the granola. Honest… endless options here. The whole family enjoys it, so it is definitely a win over here.

If you don’t have dried cherries, that’s fine! You can honestly sub in any dried fruit you like. I often swap out for raisins or cranberries to change it up. You do you.

You can also sub the maple syrup for honey if that is more your style. Don’t like almonds? Use walnuts, pecans, or even cashews… this recipe can be modified in a multitude of ways and that is the beauty of it.


Recipe

  • OVEN: 250 F
  • TIME: 45-55 minutes

You will need:

  • 2 cups rolled oats
  • 1/4 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 3 tbsp melted coconut oil
  • 1/2 cup dried cherries
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup sliced almonds
  • 2 tbsp chia seeds

To make:

  • Preheat oven to 250 F.
  • In a large bowl, add rolled oats and top with coconut sugar, maple syrup, and melted coconut oil. Stir well until everything is coated.
  • Add dried cherries, cinnamon, and salt and give it another stir.
  • On a lined baking sheet (parchment or silicone mat) press granola down evenly.
  • Bake at 250 F for about 45-60 minutes. I go in around 20 minutes and give it a quick stir and then check again at 45 minutes. I usually end up going the full hour – your oven may be different, so just keep checking!
  • Once done, take out and add your almonds and chia seeds and then allow to cool before jarring up.

Feel free to double or even triple the recipe if you use a lot of granola in your home. This is such a great recipe to prep on the weekend for use throughout the week. I hope you enjoy it as much as my family does. x
