Cheap Vegan Meals Using My Frugal Foods List

Hi friends! This is going to be the only post this week because it is OFFICIALLY moving week for us! I am so excited to finally get settled into our new place. I’m giving myself this week “off” to avoid getting overwhelmed. I have posts ready and scheduled for next week, too. Wish us luck. I’ll have to write a life update post after we are in and well.

But for now, a follow-up post.

You might recall a bit back I wrote a post sharing 50 of my favorite frugal vegan foods. A few of you asked me to put together some meal ideas based off that list. So finally, here it is! Budget-friendly meals for life, right?

For reference, I will include the list of foods below, but you can find the pricing and whatnot on the original post if you are interested.

Just a note – I didn’t include spices/seasoning on the list… I am just going in assuming you have some of them in your pantry already. :)

Meal Ideas Using Frugal Foods

BREAKFAST

1. Green juice (kale, celery, lemon, apple)
2. Peanut Butter Oatmeal (oats, almond milk, peanut butter, fruit)
3. Mexican tofu scramble (tofu, veggies of your choice, beans, salsa, avocado)
4. Toast with peanut butter
5. Banana and peanut butter smoothie (banana, almond milk, peanut butter, cinnamon)
6. Apple Raisin Oatmeal (oats, almond milk, simmered apples, raisins, cinnamon)
7. Avocado toast
8. Pancakes (made with oats, water, banana, and cinnamon – recipe here)

LUNCH

1. Loaded baked potato or yam (topped with beans, salsa, avocado, spring onions)
2. Burrito bowl (rice, beans, salsa, avocado)
3. Mashed bean sandwich
4. Ramen noodle bowl (Ramen noodles, avocado, spring onion)
5. Veggie sandwich (bread, mustard, avocado, lettuce, sweet potato, kale)
6. Zucchini and Onion pasta (pasta, zucchini, onion, seasoning)
7. Big salad (lettuce or kale, spring onion, baked tofu or tempeh, cucumbers, radish, apple, seasoning)
8. Peanut butter and banana sandwich
9. Minestrone soup (pasta, zucchini, onion, carrots, celery, kale, diced tomatoes, water, seasoning)
10. Baked tofu sandwich (tofu, bread, lettuce, onion, mustard)

DINNER

1. Veggie Pizza (dough, crushed tomatoes, onions, zucchini, seasoning)
2. Pasta with sauce and peas (pasta, crushed tomatoes/diced tomatoes, seasoning, garlic, frozen peas)
3. Lemon chickpea pasta
4. Lentil stew (lentils, tomato paste, carrots, celery, onion, seasoning)
5. Bean Tacos (corn tortilla, beans, avocado, salsa, onion, lime)
6. Bean chili with tortilla chips (beans, diced tomatoes, carrots, onion, seasoning)
7. Cabbage rolls (cabbage stuffed with seasoned rice and beans and topped with a tomato sauce – baked!)
8. Tempeh steaks and mashed potatoes (seasoned tempeh baked as steaks, potatoes with almond milk, butter, seasonings)
9. Sweet potato tacos (baked sweet potato, corn tortillas, salsa, avocado, lettuce)
10. Broccoli pasta (pasta tossed with garlic, broccoli, vinegar, oil)
11. Lentil sloppy joes (lentils, tomato paste, water, mustard, seasoning, bread)

SNACKS

1. Banana with peanut butter
2. Baked tofu bites
3. Baked sweet potato fries (sweet potatoes, seasoning)
4. Pretzels with peanut butter
5. Tortilla chips and salsa
6. Celery, peanut butter, and raisins
7. Assorted fruit salad
8. Smoothie (fruit of your choice, peanut butter, almond milk, kale)
9. Juice (kale, oranges, carrot, celery, apple)
10. Air-popped popcorn


I am sure there are a bunch of other meals that can be made from the above, but the above all initially stuck out to me and are what we usually do with these ingredients.
