Spinach salad with so many toppings… mushrooms, red peppers, edamame, tomatoes, carrots, cucumbers, broccoli, cauliflower, avocado, hummus… lord knows what else. Mama is hungry!!
The most random dinner because it was 93 degrees and I did not feel like doing much. Portobellos sautéed, meatless meatballs, and cranberry. Yep, random.

The poco loco hash is my favorite – potatoes with tempeh, black rice, avocado, and cheese – side of vegan sour cream and salsa.

Gotta give in to some pregnancy cravings. This is a vegan molten lava mug cake. I found the recipe on “The Craft Patch” blog and subbed in Earth Balance for butter. IT WAS INCREDIBLE. And killed the craving immediately.
Bowl of lentils – these are prepared to mimic sloppy joe filling. Definitely awesome.

Overnight oats + yogurt parfait. It’s basically just chocolate overnight oats layered with coconut yogurt, pb, and granola. It was like dessert, for real.
Black bean tacos from Tallulah’s. These are my faaaavorite in the state.
Just a sweet potato for breakfast topped with tahini and walnuts. So simple, but sooo satisfying and filling.
Sometimes you’re just feeling pasta + olive oil. Carb city.
This was a random dinner of couscous, peas, broccoli, white bean/tahini purée. It worked!
