Thankfully my appetite for healthy food came back full throttle toward the end of my first trimester and right into the second. Finally!! I feel so much better – more energy, “cleaner”, and just not as sluggish. Here’s a food diary.
Escarole + cannellini beans for meeeee (favorite).Blueberry, banana, and peanut butter smoothie.Peanut butter cookie energy balls for breakfast – I’m addicted! I shared this recipe a while back, so search for it in the archives if you’d like!This smoothie packs a whopping 26 grams of protein. Weee!A simple veggie sandwich – red roasted peppers, pickles (yup), tomato, and lettuce. Balsamic and olive oil, too.More protein packed into a smoothie – chocolate, banana, and peanut buttterrrrrrr!Avocado toast + hot sauce for life.Raw veggies + hummus from the work cafe.Lots of whole wheat couscous + cannellini beans. Simple lunch for protein!Give me all the fruit + sunshine!Quite possibly the ugliest photo I’ve ever took + uploaded but this tomato soup was soooo good. It was Annie’s brand and I added Chao cheese slices to it (the BEST vegan cheese!!) Joe ran out to get me this at 7:30pm because it was all I could think about eating. He’s a gem.Tofutti cream cheese + tomato, lightly salted – definitely in my top 5 fave breakfasts.toast + cream cheese seems to be my new go-to… plus cherry tomatoes and red peppers.tofu + greens wrap at work.Really digging this berry + walnut smoothie lately!Banana, peanut butter, cocoa powder, soy milk + flaxseed oil. Trying to get all the protein in.Went to ikea for baby furniture, left with a package of the vegan Swedish meatballs because they are SO GOOD.Brown rice + veggie stir fry from the work cafe.Avocado + hot sauce toast = everything.black bean + rice tacos with all the fixin’s – and enjoying hot sauce while I still can.Beans cooked with green beans, corn, and red onion. This was a fast and simple dinner – I just really needed some protein.Loaded veggie wrap with mustard.Fruit cup! Give me all the fruit.Avocado + hot sauce on english muffin. This seems to be a favorite lately…Another morning, another baked potato.These Ikea veggie balls are so versatile. Cooked them up with some olive oil, garlic, onions, and peppers. Such a great sandwich!Bean and avocado salad with some chips.A cheesy tofu scramble to put a dent in my protein intake for the day – more than 20 grams right here. Weee!My current favorite chocolate milkshake – recipe is in the archives, just search for it :)when husband makes you your own personal white pizza – yummmm.More fruit for the pregnant lady.Tofu scramble on toast with some hot sauce.These babies taste like Twix to me. I’m serious.Overnight oats with coconut, banana, cinnamon, + some pb/date sauce. This is life.Veggies with bbq sauce + some quinoa. My husband made this for me – YUM.Rice topped with roasted veggies, side of avocado.Baked fries + white bean and cashew cheese dip. Om nom.Loaded bean + veggie wrap – spinach, sweet potato, black beans, tomato, lettuce, pickled onions, etc . etc.1/2 cantaloupe stuffed with strawberries.Green soup topped with quinoa for protein (snuck a can of white beans in there too). You can find my green soup recipe on here, just search “green goddess soup” :)The usual.Loaded salad – there’s some spinach, romaine, avocado, artichoke hearts, tomatoes, carrots, croutons, and tons of edamame. Olive oil and vinegar. Yum!Fresh strawberriessss!Tofutti + tomato for me (duh) and red pepper hummus for him.Trying to eat better and more consciously this trimester. Whole wheat toast with peanut butter + a pile of fruit. YUM.Pancakes for dinner – the best.Close-up of my fruity breakfast.Sometimes you just want a plate of steamed asparagus for dinner.This was such a quick dinner – basically toss in whatever leftovers I had. It’s 1 zucchini spiralized and cooked with garlic, red peppers, quinoa, and some tomato sauce. Side of gardein chicken. It actually came out great!Just a big ass fruit salad bowl… probably will kill this in 3 days. Haha!Tofurky + veggie sandwich with mustard. I am not normally a mock meat fan, but this has been helping me with protein intake!I love tempeh so much. This was roasted vegetables with tempeh strips – inspired by my aunt! She made this for me recently and I’ve been craving it since. She’s amazing.Another loaded spinach salad!Caramel date smoothie – for that energy and fiber boost.Coconut rice + asparagus!Mmm chili cheese fries. Yup, vegan.The color of this smoothie makes my life – lots of berries and juice.I’m doing real good with this spinach salad for lunch situation. Loaded as usual.A tomato-based vegetable soup from the work cafe.Avo toast life for life.Vegan carrot cake from Crazy Burger – my grandma grabbed this for me. YES please.Avo on cream cheese. The life. Plus, this week little babe is as big as an avocado. Awww yes.Lunar smoothie.Chik’n, vegan cheese, and sweet potato quesadilla with some guac.Chocolate oats mixed with ground flaxseed and topped with soy yogurt, almond butter, cherries, and strawberries.Tofutti cream cheese toast with avocado and a side of sautéed spinach and hot sauce.Cream of mushroom pasta for dinner.Large salad with tomatoes and a dijon mustard/acv dressing.Veggie wrap loaded with spinach, cucumbers, mushrooms, tomatoes, and lots of guacamole.Lentil stew, rice and corn, topped with avocado.More chocolate oats with almond butter, soy yogurt, and cherries.Quick salad with a maple mustard dressing.Vegan cream cheese and tomato on toast.Another day, another tofu scramble burrito with spinach and avocado.A vegan “chik’n” salad wrap made with Gardein chickenless strips. Vegan pizza night! Tortilla pizzas, of course.Escarole and beans.Vegan cream cheese toast with avocado and sautéed spinach on the side.Chocolate oats with ground flaxseed, almond butter, cherries.Ramen noodles with broccoli and shaved carrots with a peanut sauce (peanut butter, water soy sauce, and hot pepper flakes).Baked sweet potato with earth balance butter and a little cinnamon.Rice bowl with some tofu bites, roasted chickpeas, sweet potatoes, avocado, and hummus.Red pepper slices + curried hummus for snack.Decaf soy latte.I am craving oranges… like crazy.Buffalo chik’n salad wrap with lots of greens and a cashew dressing.Creamy cashew mac salad.Mango mango mango. I ate my weight in Florida.Peaches, mango, watermelon. Acai bowl with mango, banana, strawberries, coconut, and so much granola.Avocado, mango, and corn salad.Out to eat in Florida! This was spaghetti squash with lentil balls. YUM.My mom made this avocado and basil spaghetti with tomatoes. It was awesome.Coconut + acai bowl topped with more coconut, pineapple, mango, and bananas.More Florida eats – the Impossible burger. It was the first time I had it and I second-guessed if it was a vegan patty. It was good, but very real.Bubble teaaaa!Acai bowl topped with banana, mango, pineapple, strawberry, and almond butter.Woof. This loaded s’mores cinnamon bun from cinnaholics was insane… too much for me, to be honest. But had to try!Chickpea aglio e olio. Such a great iron-rich lunch for toddlers. Willow ate every bite!Lentil stew for that protein and iron intake.Oats with almond butter, berries, and bananas.Nim chow.Veggie fajita night with some cashew cream and lettuce. So delicious.Baked sweet potato smothered in tahini.Veggies and chik’n on a flaxseed wrap with homemade roasted red pepper hummus.Jackfruit + rice burritos for dinner.Spaghetti squash topped with raw corn, tomatoes, avocado, and a drizzle of olive oil.Chocolate oats with warm berries and almond butter.Falafel wrap!Mashed cauliflower. So creamy.Snacking on spaghetti squash.More oats – same deal. Warm berries, almond butter… you know.His and hers Mediterranean plates! Some couscous, lentil salad, roasted red peppers, lettuce, tomato, hummus, tahini, and a pita wrap.A quick marinara sauce over ziti and some steamed broccoli.Strawberry pie :)So much mango lately. It’s so refreshing!!Date night dessert – vegan cake batter ice cream and a pb brownie.Veggie hash with some pesto and a side of cream cheese + tomato toast.Homemade roasted red pepper hummus on a bagel.Veggie and hummus wrap.Homemade potato + corn chowder. With lots of dill – the best!Breakfast burrito using the Just Egg – some salsa, guac, black beans, and sour cream.Chocolate oats with almond butter, ground flax, and a ton of fruit.Just Egg breakfast tacos.Date night – vegan chili cheese fries.Veggie burgers from our date night.Tortilla pizzas – some with red sauce, olives, and cashew cream and the others with pesto, tomato, and cashew cream.And more mango.Spaghetti with tomatoes and pesto.Lentil stew over rice and a ton of spinach.I ate this black bean burrito for breakfast. It was that kinda day. Some corn, salsa, avocado, and cashew cream in there.Rabe with lots of garlic and olive oil. I meant to add pasta to it but it was so good, I just ate this whole thing as is.Sesame bagel with homemade cashew cheese + herb spread, topped with tomatoes and basil.Pasta with broccoli.Pesto tortilla pizza with grape tomatoes.Potato hash.Coconut lentil stew that I shared with Willow. So yummy.Sweet potato fries and a homemade ranch dressing (I used some vegan mayo, soy milk, garlic powder, onion powder, salt, pepper, and dill).Broccoli rabe pasta!Freshly picked strawberries.Strawberry muffin.Veggie nim chow takeout.This wrap is literally a hodge podge of things… some gardein chik’n, tomatoes, peppers, corn, bbq sauce, a vegan ranch, lettuce… it was a lot, but good.Mango happiness.Pitaya bowl with some mango, banana, and coconut for an afternoon snack.Brunch with bagels, pancakes, and lots of fruit.Cherry + strawberry smoothie made with almond milk, kale, and some almond butter.Cherries are arguably my favorite part of summer.A vegan feast with Willow and my Nana – cinnamon knot, oat + fruit bar, coconut yogurt parfait. We shared everything :)S’more with a vegan marshmallow. Weee! One of my favorite desserts ever.Roasted cabbage!A kale salad my mom brought over… lots of nuts, seeds, dried fruit, and tahini. So good!Potato and chickpea curry! So spicy and delicious.Loaded veggie pizza night with cashew cream.Leftovers bowl – some quinoa, lentils, peas, and sweet potatoes covered in tahini. Because tahini makes everything better :)Greens salad with cranberries, pepitas, cukes, and some Violife feta cheese. Side of tofu salad sandwich – my mom made all this for us :)Potato and chickpea curry. Yay for iron.Homemade popsicles! Fruit, yogurt, and kale.Pasta with lots of garlic and veggies – I think there’s onion, zucchini, kale, and grape tomatoes.Another lunch with my mom – same salad as mentioned earlier, but this time with some curried noodles.
