Fast + Cheap Vegan Pad Thai

Hey friends!

I am so excited to be sharing this recipe. This isn’t traditional pad thai, so if that is what you’re looking for… this won’t be it. But this is a really fast, cheap, and easy way to enjoy a dish that closely resembles pad thai. My husband and I are crazy about this stuff but we’ve been trying to eat out less. Enter this crazy cheap and easy recipe… we are so impressed with it. Whenever we eat it, we end up talking about it all night. LOL It’s like that in our house. It’s the little things, right?

Frozen veggies, an easy peanut butter sauce, and ramen noodles… it doesn’t get lazier than that. Plus… it looks so fancy. If you are serving to friends or family, they would think you’d been slaving away to get this made. But in reality, this dish takes about 15-20 minutes.


Recipe

You will need:

  • 1/2 cup frozen green beans
  • 1/2 cup frozen broccoli
  • 1/2 vidalia onion, sliced thin
  • Splash of water
  • 2 tbsp thai sweet chili sauce (Trader Joe’s has a good one)
  • 1 carrot, shredded or peeled into ribbons
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • Dash of: garlic powder, salt, pepper
  • Splash of warm water (for consistency)
  • 1 package of instant ramen noodles (minus the packet)
  • Red pepper flakes to garnish (optional)
  • 1 spring onion, sliced (optional)

To make:

  • In a pan over medium heat, add frozen veggies, onion, and a splash of water. Cover and allow to thaw. Add more water to prevent sticking if necessary.
  • Once onions are softened, add in thai sweet chili sauce and carrots. Give a quick stir until combined and remove from heat. (I like the carrot ribbons to be a bit raw… good crunch!)
  • In a small bowl, add peanut butter, soy sauce, apple cider vinegar, garlic powder, salt, and pepper. Add warm water a little bit at a time to thin out the sauce.
  • Prepare instant ramen according to package (but do not use the flavor packet… just water!) This takes about 3 minutes!
  • Once done, add ramen to the pan of sweet chili veggies and add sauce. Stir until everything is coated well.
  • Serve with garnish of spring onions and a dash of red pepper flakes.
