Hi friends! I’m sharing a nice, easy recipe today that the whole family can enjoy… but particularly great for kids who may not like oatmeal or need a boost of protein for breakfast. ;)
These simple breakfast cookies only have 3 ingredients (unless you add the optional additions) and pack a good protein punch with peanut butter and oats. Serve with a glass of soy milk (or whatever your favorite is) and your kids will be more than happy to have cookies and milk to start their day.
Recipe
You will need:
- 2 ripe bananas
- 1 3/4 cup rolled oats
- 1/4 cup peanut butter
- Mini chocolate chips (optional)
- Dash of cinnamon (optional)
To make:
- Preheat oven to 350 F.
- In a bowl, mash two bananas well.
- Add rolled oats and peanut butter and stir until well combined. If you are adding cinnamon or chocolate chips, throw those in, too.
- On a parchment-lined baking sheet, add dollops of batter (it will not stick together very well so I simply shape with a spoon once on the pan).
- Bake at 350 F for 12-15 minutes, or until golden.
You could also add nuts, raisins, ground flax, unsweetened cocoa powder, or whatever else to these cookies to keep things interesting. I hope that your family enjoys them as much as we do. x
