Hi friends!
Back with another dinner menu for you. With September beginning tomorrow (!!!), I will finally finally finally begin to enjoy cooking again. I really have a hard time enjoying it in the summer and look forward to the slower, cooler days for all the soups, stews, and comforting meals. Are you similar in that regard? Let me know.
So here is what we have on the menu for the first week of September!
Monday ~ We are going to a cookout for the holiday so we’ll be enjoying vegan burgers/hotdogs, grilled veggies, potato salad, corn, etc. I am very much looking forward to it. It feels like a goodbye kiss to summer.
Tuesday ~ I’m making a giant pot of my favorite lentil stew and serving with bread (that my partner made!) I love making this because I always have leftovers for lunch all week.
Wednesday ~ Since I’m making soup on Tue, I’m pushing tacos to Wednesday. I think we’ll go with a classic black bean filling this week with all the usual toppings.
Thursday ~ Lemon lentil curry with jasmine rice. I love a good curry when the temps dip and my oldest really loves this recipe.
Friday ~ Tempeh bacon BLTs because my youngest has been requesting this dinner. It’s such an easy one for a Friday night. I buy the tempeh already seasoned as bacon (by lightlife) and simply cook it up pile up the bread with all the fixin’s. I will probably serve with a side of brussel’s sprouts and chips.
Also… Happy Great British Bake Off release day to those who celebrate!!! I am so HAPPY!!!
