What I’ve Been Eating Lately [Vegan Pregnancy – Second Trimester]
Second trimester – weeeeee!! Thankfully my appetite for healthy food came back full throttle toward the end of my first trimester and right into the second. Finally!! I feel so much better – more energy, “cleaner”, and just not as sluggish. And now I can focus on all the good stuff that this little girl needs. Judging by all the fruit I have been consuming, I may birth a watermelon. ;)

Escarole + cannellini beans for meeeee (favorite).Blueberry, banana, and peanut butter smoothie.Peanut butter cookie energy balls for breakfast – I’m addicted! I shared this recipe a while back, so search for it in the archives if you’d like!This smoothie packs a whopping 26 grams of protein. Weee!A simple veggie sandwich – red roasted peppers, pickles (yup), tomato, and lettuce. Balsamic and olive oil, too.More protein packed into a smoothie – chocolate, banana, and peanut buttterrrrrrr!Avocado toast + hot sauce for life.Raw veggies + hummus from the work cafe.Lots of whole wheat couscous + cannellini beans. Simple lunch for protein!Give me all the fruit + sunshine!Quite possibly the ugliest photo I’ve ever took + uploaded but this tomato soup was soooo good. It was Annie’s brand and I added Chao cheese slices to it (the BEST vegan cheese!!) Joe ran out to get me this at 7:30pm because it was all I could think about eating. He’s a gem.Tofutti cream cheese + tomato, lightly salted – definitely in my top 5 fave breakfasts.I got these babies in my Vegan Cuts subscription. In case you’re wondering, these are like crack. Best vegan candy EVER.toast + cream cheese seems to be my new go-to… plus cherry tomatoes and red peppers.tofu + greens wrap at work.Really digging this berry + walnut smoothie lately!Banana, peanut butter, cocoa powder, soy milk + flaxseed oil. Trying to get all the protein in.Went to ikea for baby furniture, left with a package of the vegan Swedish meatballs because they are SO GOOD.Brown rice + veggie stir fry from the work cafe.Avocado + hot sauce toast = everything.black bean + rice tacos with all the fixin’s – and enjoying hot sauce while I still can.Banana, strawberry, flaxseed oil, cocoa, almond milk + cinnamon peanut butter from Wild Friends! Also, my fave coffee table books by one of my favorite artists, Katie Daisy (How to Be a Wildflower).Beans cooked with green beans, corn, and red onion. This was a fast and simple dinner – I just really needed some protein.Loaded veggie wrap with mustard.Fruit cup! Give me all the fruit.Avocado + hot sauce on english muffin. This seems to be a favorite lately…Another morning, another baked potato.These Ikea veggie balls are so versatile. Cooked them up with some olive oil, garlic, onions, and peppers. Such a great sandwich!Bean and avocado salad with some chips.A cheesy tofu scramble to put a dent in my protein intake for the day – more than 20 grams right here. Weee!My current favorite chocolate milkshake – recipe is in the archives, just search for it :)when husband makes you your own personal white pizza – yummmm.lemon poppy seed bread on a cold day.More fruit for the pregnant lady.Tofu scramble on toast with some hot sauce.These babies taste like Twix to me. I’m serious.Overnight oats with coconut, banana, cinnamon, + some pb/date sauce. This is life.Veggies with bbq sauce + some quinoa. My husband made this for me – YUM.Rice topped with roasted veggies, side of avocado.Baked fries + white bean and cashew cheese dip. Om nom.Green (except it’s brown…) smoothie!Loaded bean + veggie wrap – spinach, sweet potato, black beans, tomato, lettuce, pickled onions, etc . etc.1/2 cantaloupe stuffed with strawberries.Green soup topped with quinoa for protein (snuck a can of white beans in there too). You can find my green soup recipe on here, just search “green goddess soup” :)The usual.Loaded salad – there’s some spinach, romaine, avocado, artichoke hearts, tomatoes, carrots, croutons, and tons of edamame. Olive oil and vinegar. Yum!Fresh strawberriessss!Tofutti + tomato for me (duh) and red pepper hummus for him.Trying to eat better and more consciously this trimester. Whole wheat toast with peanut butter + a pile of fruit. YUM.Pancakes for dinner – the best.Close-up of my fruity breakfast.Sometimes you just want a plate of steamed asparagus for dinner.Another loaded spinach salad for me!This was such a quick dinner – basically toss in whatever leftovers I had. It’s 1 zucchini spiralized and cooked with garlic, red peppers, quinoa, and some tomato sauce. Side of gardein chicken. It actually came out great!Just a big ass fruit salad bowl… probably will kill this in 3 days. Haha!Tofurky + veggie sandwich with mustard. I am not normally a mock meat fan, but this has been helping me with protein intake!I love tempeh so much. This was roasted vegetables with tempeh strips – inspired by my aunt! She made this for me recently and I’ve been craving it since. She’s amazing.Another loaded spinach salad!Caramel date smoothie – for that energy and fiber boost.Coconut rice + asparagus!Mmm chili cheese fries. Yup, vegan.The color of this smoothie makes my life – lots of berries and juice.I’m doing real good with this spinach salad for lunch situation. Loaded as usual.A tomato-based vegetable soup from the work cafe.Avo toast life for life.Vegan carrot cake from Crazy Burger – my grandma grabbed this for me. YES please.Avo on cream cheese. The life. Plus, this week little babe is as big as an avocado. Awww yes.Lunar smoothie. :)
