Let the Christmas cookie marathon continue! Not quite sure what it is with me and holiday balls, but they seem to be my thing. Which reminds me of this holiday classic:
lolol – so today, I’m sharing a family recipe for Pistachio Butter Balls – vegan style, of course.
The Recipe
Oven: 375 F
Bake Time: 15-25 minutes
You will need:
- 1/2 cup confectioner’s sugar
- 1 cup Earth Balance butter
- 1.2 cup raw pistachios, chopped
- 1 tbs vanilla
- 2 1/2 cup all-purpose flour
- 1 extra cup of confectioners sugar
To make:
- Cream together sugar and butter, until smooth
- Add vanilla and nuts to the mix, and give it a quick stir
- Slowly sift in flour, mixing well as you go (use hands if easier, towards the end)
- Roll into small balls – the dough will look crumbly, so you may want to wet your hands every once in a while during this
- Bake for 15-25 minutes, or until light brown on the bottom
- Add 1 cup confectioner’s sugar to a small bowl – as soon as you take cookies out of oven, dip in bowl and toss around
- Allow to cool (I cover with a bit more sugar, too!)
