Home stretch over here! This may be my last vegan pregnancy food post for a bit, so there’s lots after the cut. I am hoping that once I find my groove when she gets here, I’ll start taking photos and posting my food while being a breastfeeding mama. Keep an eye out for that!

Pretty much all I want is this vegan ranch dip I’ve been making. It’s just a couple tbs vegan mayo, drop of soy milk, onion powder, pepper, and garlic salt. I’m obsessed.
Burrito bowl on a bed of spinach for all the folate and protein. Topped with vegan ranch (again) because duh. This recipe is in the archives – search “ranch burrito bowl” to find it.
Spinach bagel with the worksssss. OJ because… always craving it.

Chocolate overnight oats – plain and simple.
More chocolate lava mug cake for me. Definitely an unhealthy craving, but whatever.

Peachy smoothie bowl because I’m loving this color lately. Made with frozen peaches, strawberries, coconut yogurt, and water.

Breakfast spread from the work cafe! Home fries, spinach, avocado, and an english. Made a sandwich with the spinach and avocado.
More Del’s frozen lemonade. It has definitely been a craving.

Toast with tofutti and everything bagel seasoning (from Trader Joe’s!) – it’s SO GOOD.

Sautéed spinach… where two cups wilts down to literally nothing.
Made these quick quesadillas for dinner and my husband loved them. Refried black beans, corn, onion, and cashew cheese in the middle, topped with vegan sour cream, lettuce, and tomato.
strawberry, banana, peanut butter, and almond milk. 10 grams of protein!
This was quite a hodge podge of a dinner. Made mashed potato croquettes… topped with a veggie and rice stir fry and a quick brown gravy. It wasn’t too bad!
Folate + omegas.
It’s been so hot here, so doing these hot days the best I know how. The almond caramel flavor is my new jam.

Takeout pizza! Mushrooms, onions, olives, and daiya cheeeeese.
Had some leftover beans and rice, so I tossed that in a pot with some frozen veggies and some leftover tomato broth. Seasoned it. Not too bad for using the leftovers in a pinch!

Minimalist Baker’s funfetti cake… for myself. I just really needed this before I have to lose pregnancy weight, lol!
