Another hodge podge of things that I’ve been eating as a nursing mama. This batch includes a lot of good stuff that I ate while visiting Delray, FL. You can totally tell which meals are from there – they look much more vibrant than the ones I am eating at home, haha! Fell in love with the vegan food scene down there. Donuts, acai bowls, farm fresh greens, and TONS of ripe ripe ripe organic fruit. It was the life.

Fast burritos for dinner – it’s just a gardein burger cooked up and rolled with shredded carrots, olives, vegan sour cream, and hot sauce. This was so good for being so quick.
Noodles with creamy hummus and peas.
Buddha bowl with some rice, roasted tempeh, chickpeas, purple sweet potato, spinach, lemon, and maple tahini dressing.
Sautéed spinach + avocado for breakfast. Topped with hot sauce!
Healthy sweets! I love making a batch of frozen banana slices with chocolate drizzle. Also, these date candies are bomb.
Rice, corn, spinach, olives, roasted tempeh/chickpeas topped with a squeeze of lime and hot sauce.
Lentil soup! This was a can of Amy’s brand – I added spinach and rice.
Quick white bean, onion, and spinach medley with some rice.
Chocolate cherry/raspberry nice cream.
Black beans, zucchini, spinach, and onion for breakfast.
Baked sweet potato ahhh. If you have time, DON’T USE MICROWAVE. Sweet potatoes are 10 x’s better in a 400 degree oven for 60-75 minutes. So soft and creamy and sweet. Topped with tahini!
Cinnamon oatmeal + chocolate cherry smoothie. Frozen cherries, too.
Sweet potato, spinach, roasted chickpeas, and tempeh with some BBQ sauce.
Vegan gingerbread + a soy capp.
Had brunch with my good friend and this was to die for – it was a lentil and potato hash with some scrambled tofu. YUM.

This acai bowl was the best I’ve had – loaded with so many awesome toppings.
Vegan donuts from Parlour Vegan Bakery in Boca Raton. These were out of control, especially the Butterbeer!!

I whipped up some chocolate almond butter (just adding some unsweetened cocoa powder + a bit of water) for my english muffin.
Made this recipe by This Rawsome Vegan Life – it is to die for. Garlicky kale, sweet potato, quinoa, tahini, and pecans.

My father-in-law surprised us with vegan donuts! And I died and went to heaven with that jelly.

My mom used to make us this for a snack when we got home from school. It’s toast with Earth Balance and sprinkled with sugar and cinnamon. It’s so nostalgic!
