Easy Vegan Breakfast Meals for Beginners

Hi friends!

I feel like I always have friends and family asking me how I eat vegan/plant-based. I hate the myth that eating this way is “hard” or impossible. If you’ve been around here for a bit, you know I’ve written numerous posts that help debunk any of these myths – here’s a whole bunch of posts to prove it.

I thought a series like this one might help give anyone who is wondering an idea of what I typically eat for breakfast, lunch, and dinner. Breakfast is always a concern because a lot of people ask me what I have if I don’t eat eggs. Well, lots of things! Here are some of my go-to vegan and plant-based breakfasts. They are easy enough for beginners, too.

#1: Smoothie Bowl

Smoothies in a bowl or cup, but I featured a bowl because this peach one is dreamy. Smoothies are so fast to throw into a blender and then hit the road. Bowls are nice when you are staying in, because you can load up on toppings. Either way, it is a fast and easy way to fuel up. I have a ton of smoothie recipes on here.

#2: Eggless Breakfast Burrito

So yeah, you totally do not need eggs for a breakfast burrito. I tend to go for tofu, but if you are not a fan or not ready to try that, you can just use sweet potato, quinoa, black beans, and a ton of veggies. The recipe for this one above is here, but play around with whatever you like. Trust me, anything in a tortilla wrapped up works.

#3: Vegan Cream Cheese + Tomato Toast

Pretty straight forward. I love Trader Joe’s vegan cream cheese or the Tofutti brand. Top with sliced tomatoes (or cucumbers if you’d prefer) and season with some salt. I seasoned mine with some “everything bagel seasoning” from Trader Joe’s. Not necessary, but so good if you have access to that!

#4: Breakfast Sandwich

A good ‘ol fashioned breakfast sandwich with some vegan cheese and avocado is always a good idea. This one features tofu. I know not everyone is a fan – especially beginners… I wasn’t! But give it a try, I think when it is seasoned and cooked well, it makes a huge difference.

#5: Loaded Oats

Oatmeal is a no-brainer. I don’t have a recipe for this one above, but it is basically just oats prepared regularly with some frozen raspberries, chocolate syrup (cocoa powder + maple syrup blend), and some almond milk. I also LOVE overnight oats – here is a great recipe.

#6: Acai Bowl

They sell acai packets at Trader Joe’s… so accessible, healthy, and gorgeous. I’ve been making these kind of bowls a ton lately because they remind me of summer. The best part is loading up on the toppings. Just go crazy. If you need some inspiration, I shared my all-time favorite acai bowl recipe here.

#7: Yogurt Bowl

Find your favorite vegan brand of yogurt (I like Cashewgurt but there are so many – try and test them out to find what works for you!) and top with granola and fruit.

#8: Avocado Toast

It’s just too good and too easy. Mash up an avocado with some lemon juice and top with some fresh veggies – like above (spinach, tomato, cukes). This is another healthy and super filling vegan breakfast.

#9: Tofu Scramble

Another tofu recipe, but I promise you that this is so bomb. If you miss omelets or scrambled eggs, I highly suggest giving this a try. Your tastebuds will adjust over time, too. If you don’t like it one day, try it again in a couple months!

#10: Breakfast Hash

What’s better than breakfast potatoes, right? This recipe is one of my favorite ways to enjoy them. I also love to make this with sweet potatoes.
