What I Eat When I Want to Lose Weight as a Vegan

Hi friends!

It’s been a bit since I’ve shared a look into my weight loss journey. I am happy where I am right now and haven’t been going too crazy. Just enjoying whole, plant-based foods in their true form really help to keep my weight in check and overall mindset and vibe feeling strong. But for those weeks that I am feeling more sluggish than usual or if I am looking to lose a few pounds, I tend to manage what I am eating a bit more.

Don’t get me wrong – this girl eats vegan pizza and pasta every week (proof of this in my food diary posts) but I definitely cut back a bit when I am trying to eat cleaner.

Here’s a quick overview of what I typically eat when I want to lose weight or shed a few pounds as a vegan.


Breakfast: Oats

Trying to lose weight or not, I almost always start my morning with a bowl of oats. They are just so good for you and can be made hundreds of different ways. My favorite way to enjoy them is with some unsweetened cocoa powder, date syrup, frozen cherries, and almond butter. If you follow me on Instagram, you already know this!

Lunch: Mediterranean Quinoa Salad

When I am watching my weight, I tend to gravitate towards heartier salads. This warm Mediterranean quinoa salad is easy to put together and very filling.

Snack: Smoothie OR Peanut Butter/Date Toast OR Baked Sweet Potatoes with Hummus

Here are THREE of my go-to snacks. I change things up often – sometimes I will just load up on fruit instead. But if you want a solid snack, these are all filling and definitely satisfying. I prefer to use PB2 powder for less fat but you can use regular PB – your preference.

Toast up your favorite bread and top with peanut butter, dates, and cinnamon.

I just bake my sliced sweet potatoes in a 400 F degree oven for about 25-30 minutes and add a bit of curry powder to my hummus. YUM!

Dinner: Rainbow Summer Rolls

Put anything in a rice wrap and I am happy. They are low in calories and can be stuffed with a ton of vibrant fruits and veggies for the perfect dinner. I always serve mine with a spicy peanut sauce, too.
