I recently posted this to Instagram but wanted to share the recipe here so it is easy to find if you ever see me post this again. I make these mug cakes every once in a while when I am really craving something sweet. I talk a lot on here about eating sugar-free, because that is definitely how I aim to eat most days. The keyword being “most,” because it is certainly not always. I am not perfect, nor should anyone be, really. Eat what makes you happy. If I am craving this and eat great 90% of the time, then you bet your ass I am going to enjoy this lava mug cake sans guilt!

This is so fast and simple to make… it is literally done in under 5 minutes, and will satisfy your craving… trust me!
Recipe
You will need:
- 1 tbsp Earth Balance butter, melted
- 4 tbsps water
- 1 pinch salt
- 1 tbsp dark chocolate cocoa powder
- 1 tbsp raw sugar
- 2 tbsps flour
To make:
- Add butter to mug and microwave on high for about 20-30 seconds (or until melted).
- Once melted, add the remaining ingredients to mug and stir well until smooth. If it looks chunky, add a bit more
- water to smooth out.
- Once smooth, place mug in microwave and cook on high for 20-30 seconds. I usually aim for 20 because I like more “lava”. If you prefer more cake, go for 30 seconds.
- Dig in!
This is far from the healthiest recipe on here, but it is such a quick and easy treat for those nights you are craving something rich and chocolate-y. I hope you enjoy!! xx bianca
