Vegan Tofu Scramble Recipe for Babies

When you say you are raising a plant-based baby, it is almost inevitable that people will ask about protein. I’m happy to say that Willow gets a whole lot of protein in her diet – from beans, lentils, greens, and tofu. She’s taken quite a liking to tofu, to be honest. I have been making this baby-friendly tofu scramble for her and she really goes nuts. I wanted to share it here, for any other moms who are raising a vegan, plant-based, or vegetarian baby – or not! Whatever the case may be for your family, this is an awesome dish that is easy to chew. It was a great segue for transitioning Willow from purées to finger-foods. If you’ve been following me on IG, you know how nervous I was about this whole ordeal. So much anxiety! But I’m so glad we have found recipes that made the transition much easier on my panicked heart (lol!)

Also, I enjoy this recipe just as much. I’ll usually end up eating some while she eats hers.


If your baby hasn’t had any of the ingredients in this dish, you may want to test it out first to check for any reactions or sensitivities. Just a note!


Recipe

You will need:

  • 1/2 zucchini, peeled and cut into thin bits (or however big you believe it best for your baby)
  • 1/4 cup water
  • 1 tsp turmeric
  • 1 block of tofu, pressed to eliminate excess water
  • 1 tsp nutritional yeast
  • Dash of onion powder and garlic powder
  • Water, if necessary to avoid sticking to pan
  • Avocado (optional add-in)

To make:

  • Peel and cut zucchini – cut up as you believe it best for your baby. I usually cut it longways in 3 parts and then cut thin slices horizontally.
  • Add zucchini to pan with 1/4 cup water and turmeric. Allow to simmer on medium, until soft.
  • Crumble 1 block of tofu into pan and toss until coated with turmeric.
  • Add nutritional yeast, onion powder, and garlic powder – toss until mixed in. Cover and turn heat to low – cook for about 10 minutes. Add more water if necessary to avoid sticking to pan.
  • Optional – while this is cooking, cut up an avocado (however big or small you believe it best for your child). Mix into scramble right before serving.
  • Serve with a side of fruit! Willow loves raspberries and banana.

A fast, healthy, and protein-packed breakfast for your babe. The tofu is so crumbly and the perfect food for babies who are learning to chew their food. The zucchini is also so soft, it really just mushes up immediately. I feel much less nervous serving this to her… it really helped us both to build confidence in chewing and transitioning to finger foods!

  1. I’m honestly more interested to try this myself! Although we are not raising our baby vegan/vegetarian, I still would like to have tofu as one of the protein sources he enjoys.
