Babies eating pasta is probably the cutest damn thing in the world. When I first introduced pasta to Willow, she went NUTS. We gave her this spiral brown rice pasta with a veggie-packed green sauce when she was 8 1/2 months and we started to introduce finger foods. She couldn’t scarf it down fast enough – I had to constantly remind her to CHEW and SWALLOW… and DRINK. Girl knows what she likes, and when she likes it… oof.
I am more than happy to serve this to her, because it is packed with good stuff. We’re lucky to be blessed with a girl who loves almost anything you put in front of her. But if you have a picky eater on your hands, this may be a go-to dish to sneak in some vegetables and healthy fats because it features spinach, avocado, and more.
It is also such a great recipe for vegan/plant-based babies especially because the nutritional yeast (which gives it the cheesy flavor) is a powerhouse source of vitamin B12. Plus, cheesiness is always a good thing.
So I wanted to share this recipe with you all, because it is definitely Willow’s favorite currently. We make this very often in our house! It makes me so happy that she is into the green stuff – for now, anyway.
Just a note that this makes a pretty decent size batch, so feel free to freeze for later! Also, if you are making this for a baby and they have not had any of the below items yet, you may want to try it out before blending all this together in case of an allergy. Especially since this features nuts – but the cashews are definitely optional.
Recipe
You will need:
- 1 small potato, diced
- 1 small carrot, diced (or 3-4 baby carrots)
- 1/4 cup onion, diced
- 1 small handful of spinach
- 1 tbs cashews (optional)
- 1/4 avocado
- 1/4 cup+ water (the starch water from your boiling veggies, if possible) – add more as you go to get the desired consistency
- 1 tsp nutritional yeast
- Dash of garlic powder
- Pasta of your choice (we like brown rice spiral pasta)
To make:
- Add diced potato, carrot, and onion to a pot of water. Bring to a boil – let simmer until veggies are soft.
- In a bullet or blender, add spinach, avocado, water from boiling veggies (or regular if you forget), cashews, nutritional yeast, and garlic powder. Blend on high until smooth.
- Once veggies are done, add to blender with the rest of your liquid and run until smooth. Add more water if necessary for desired consistency.
- Cook pasta according to package.
- Mix pasta with a bit of sauce and cut up if necessary. Serve!
Willow cannot get enough of this pasta. Honestly, it is so delicious and healthy. Experiment and add other veggies if you’d like, too. I think kale, peas, or even zucchini would make great additions or substitutes.
