Hi friends!
I’ve been meaning to share this recipe because it is Willow’s breakfast literally every single day. I serve her these pancakes with two sides of fruit (usually berries and whatever else I have in the fridge). She LOVES them. The best part is that they do not feature white flour, sugar, or dairy. Just wholesome ingredients that I feel good about.
Another bonus is that it’s the easiest recipe ever – I make a huge batch of pancakes in 15 minutes and then have enough for the week + a ton to freeze for later. What makes it so easy is that you just add all ingredients to your blender/bullet, run until smooth, and then pour directly onto griddle. Minimal mess. Minimal ingredients. And your babe will love them, I’m sure! Willow can’t get enough.
Recipe
You will need:
- 1 cup rolled oats
- 1 tbs almond flour (not necessary, but I add for some protein)
- 1 tbs ground flaxseed
- 1 ripe banana
- 1/2 tsp cinnamon
- 1 1/4 cup water
To make:
- Add all ingredients to your blender/bullet and run until smooth.
- Heat up a non-stick griddle (or use a non-stick spray) and pour out a bit of batter. Turn heat down to medium. Wait until the batter bubbles a bit, then flip with a spatula (about 2-3 minutes).
- Allow other side to cook for another 2-3 minutes. Take off griddle and plate.
- Continue to do this until batter is done and you have a stack of pancakes.
I have added blueberries to this mix and even a handful of spinach (for some added health benefits). Both turned out awesome! Get creative and add what you think your kid(s) will like.
I feel great about serving these to Willow every single day. Oatmeal can be very messy, especially since she isn’t using a spoon 100% yet (but we’re getting there), so this is a great way to get in those fiber-filled oats.
