I can’t believe Willow is 20 months. How is that even possible?? At any rate, she’s still a pretty good eater and we have been very very blessed. She hasn’t been eating her veggies as easily as I’d like… I feel like I have been trying to get more creative with it. Some days she is into them, other days she wants no part. She loves mushrooms, red peppers, potatoes (white and sweet), cauliflower, and corn. But we struggle with carrots, and the greens… green beans, broccoli, zucchini, peas (suddenly), cucumbers etc. But I just continue to serve them, whether she eats them or not!
Enjoy the plant-based meal inspiration for your own toddler. :)
