Fruit, Kale & Yogurt Popsicles (Vegan)

Hi friends!

I have a short and sweet recipe for today because I thought these were too good not to share. Not only did I enjoy, but Willow loooved them. They are very much a guilt-free treat because they are made with fruit, coconut yogurt, and even some kale.

You’ll need your own popsicle molds for this recipe. I found mine a long time ago at HomeGoods. I think they were maybe $6, tops? Inexpensive for endless amounts of popsicle recipes throughout the summer. This is also a fun way to get your child involved in the kitchen. They’ll be excited to make up their own flavors. Who can blame them?


Recipe

You will need:

  • 1 banana
  • ~6-7 strawberries
  • 1/2 cup pineapple
  • Small handful of kale leaves (no stems)
  • 1/3 cup coconut yogurt
  • Juice from 1 orange
  • 1/4 cup pineapple juice

To make:

  • Add all ingredients to a high-speed blender and run until completely smooth.
  • Fill molds with smoothie and freeze for at least 3-4 hours before enjoying.
  • Any leftover smoothie? Enjoy it now!
  • TIP: You may want to run the popsicle mold under warm water before trying to take out to eat. It loosens the popsicle up a bit so you don’t pull the stick out by accident. You definitely want to be gentle!

That’s how easy it is. There are really endless combinations, so get creative. But this recipe definitely had great flavor and kept us both happy.
