This post has been requested a lot, especially when I ask you guys what you’d like to see. I am always compiling the “what I eat” posts but none capture any particular day. To be honest, it is because I just forget to document everything on a given day. It isn’t easy with a baby and toddler, that’s for sure. But I wanted to commit and deliver! So finally, here it is.
This is very realistic… I’m not gonna lie, it isn’t all pretty and staged or anything. But I think that is the point, right? I hope it gives you some inspiration.
Breakfast is an english muffin with a little Earth Balance butter, strawberry jam, and two clementines.
For lunch, here’s some leftover broccoli rabe & ziti with a little vegan parm. This is one of my favorites. There was more but I started eating it and then remembered that I needed a photo. Whoooops.
I may or may not have had a piece or two of this peppermint bark.
Willow went down for her nap and I got hungry again (I am exclusively pumping for my youngest so I tend to get hungry a lot). I warmed up some leftover mashed potatoes with some frozen veggies. It was quick and easy to prepare… which is what I am all about these days.
More snacking before dinner – some canned pineapple. Not a lot of good fresh fruit during the winter, so we have a lot more canned fruit in the house lately.
Willow wanted a banana for snack – she ate half, so I ate the other half.
Dinner is a pinto bean, corn, onion, and Violyfe cheese quesadilla topped with salsa and vegan sour cream.
An opal apple while we relax and catch up on TV. If I snack at night, it is usually an apple, orange, air-popped popcorn, or some type of cereal. This hit the spot tonight.
So there you have it! It’s not glamorous but it’s what’s happening these days. I’ll be sharing what Willow eats in a day (I documented hers from this day, too). If you are interested in seeing this type of post for a toddler, stay tuned. xo
