Hi friends! I am always asked to share more of what Willow eats. I understand why because I am constantly seeing what other parents are feeding their plant-based kiddos for inspiration. It’s really helpful and often helps break us out of ruts. Breakfasts can sometimes be a challenge. We don’t eat eggs in our home (though I did expose Willow to them for allergy purposes… and she didn’t even enjoy them. More on that here).
So today I wanted to share what a whole week of breakfasts look like. I try to switch it up daily so she doesn’t get bored (which she often does) and also just exposure to different things – some favorites and some new. I hope that it gives you some ideas for your own toddler. And if you like this kind of post, let me know in the comments so I know to do more of these.
MONDAY
Peach muffin (made over the weekend), side of sliced apples, and blueberry coconut yogurt mixed with chia seeds. She ate all the yogurt (and had seconds), about 1/2 apples, and most of the muffin.
TUESDAY
Keeping it real here. I had an 8AM appointment so we had to get out of the house pretty early (and she doesn’t get hungry until about 8:30/9). Willow had a quick piece of toast before we left to hold her over (not pictured) but when we got back, I served her broccoli & vegan cheddar tofu quiche with a side of grapes to complete the meal. She ate all the toast, all of the quiche and about 1/2 the grapes.
WEDNESDAY
Healthy fat-packed chocolate peanut butter chia pudding made the night before, sliced mango, and mandarin oranges. She ate all the pudding and a couple bites of the fruit.
THURSDAY
Chocolate chip oat pancakes topped with syrup and a side of bananas. She ate all but a couple pieces of the pancakes and maybe 2 pieces of banana. She’s a pancake girl – recipe for these here. I always make a double batch of them on the weekend and freeze for later. All you have to do it heat up for about a minute and they are delicious.
FRIDAY
Oatmeal morning! Recipe for these oats here – topped with almond butter, soy yogurt, and cherries. I mix both chia and ground flax to the oats bulk it up, too. She ate probably 3/4 of bowl.
SATURDAY
Blueberry coconut yogurt with chia seeds, english muffin with earth balance butter and jam, side of the last bit of mandarins we had. She ate all yogurt, all mandarins, and 1 piece of english muffin while sucking the jam off the other 3… obviously.
SUNDAY
Sunday is usually pancake day if we have none left in the freezer! Same recipe as I linked above with some chocolate chips. Topped with syrup and almond butter. Another tip – if you are looking to get more healthy fat into your kids diet, I like to put a little coconut oil on her pancakes instead of butter. Side of blueberries (her favorite).

Wow. I wish I had your energy. My kids don’t get quite as much variety as yours do, but I try. They love vegan cheese, vegan yoghurt, granola, fruit and juice. My daughter, who is four, also loves fresh vegetables. I guess she likes pretty much everything I like. My two-year-old nieces also like to suck the jam off bread. LOL.
Some weeks have more variety than others, lol! You do what you can do. What is with kids sucking jam off bread? Ha! xo
