Vegan American Chop Suey

When I was a kid, I looooved American Chop Suey. But I kinda just forgot about it after I went vegan/vegetarian, until now. Gardein beefless ground crumbles are perfect to make this usually meaty dish plant-based.

It’s an easy recipe for those lazy nights where you want something hearty and under 20 minutes. This is it, and it’s perfect for the entire family.


Recipe

You will need:

  • 1 tbs olive oil
  • 1 clove garlic, minced
  • 1 small onion, diced
  • 1 cup Gardein beefless ground
  • 2 cups pasta sauce, your choice (Trader Joe’s has an awesome tomato basil blend)
  • Cooked pasta of your choice (I like rotini) – about 1/2 lb.
  • Dash of chili powder, salt, and pepper
  • Vegan parmesan (optional)

To make:

  • In a pan over medium heat, add olive oil, garlic, and onion. Sauté for a couple minutes, or until onion is cooked and translucent. Add beefless ground and stir until mixed – set on low heat.
  • Cook pasta of your choice.
  • Back to the beefless ground – add about 2 cups of your favorite pasta sauce and season with chili powder, salt, and pepper. I also added a bit of vegan parmesan – I love this recipe by Minimalist Baker. Raise heat to about medium and allow sauce to heat up.
  • Stir in your pasta until everything is well combined.
  • Serve and enjoy!

My husband really loved this dish, so I think it is safe to say it will be a family favorite – even among meat-eaters. I hope you enjoy. xx bianca
