These are topped generously with black beans, corn, vegan cheese, salsa, vegan queso, tomatoes, guac, and vegan sour cream.Mango morning.Another day, another chickpea egg sandwich.Burrito quinoa bowl.Thai takeout – I got some veggies with tofu, pineapple, cashews, and this amazing sweet sauce.Gardein chik’n tenders over mashed potatoes with sautéed onions and peppers, and some rice.Vegan enchiladas.Chickpea egg with lots of avocado on an english.Vanilla soy yogurt with homemade granola and berries.Pita stuffed with veggies, avocado, and hummus.More thai takeout – I got steamed veggies and tofu with a peanut sauce.Loaded Japanese sweet potato topped with quinoa, black beans, avocado, hot sauce, and a lime cashew cream.Broccoli & chickpea spaghetti. Lots of garlic, olive oil, and vegan parm.Cornflake-crusted tofu steaks, roasted potatoes, and steamed carrots.Bowties with broccoli, chickpeas, garlic, and olive oil. Lots of pepper.Breakfast taco with tofu scramble, sweet potatoes, black beans, guac, and salsa.Pinto bean taco night with all the toppings and some corn.Portobello burger with a side of herb potatoes, salad, more portobello, and quinoa.Green leaf salad with dried cranberries, vegan feta, avocado, cukes, tomato, and pepitas.Herb tofu steaks, mashed potatoes, and quinoa with veggies.Bagel with chive cream cheese, onion, and tomato. Side of more tomato and a peach.Vegan caesar salad with crispy tofu steaks and homemade croutons.Lasagna soup.English muffin with apricot jelly and lots of fruit.Baked potato with a side of roasted cauliflower, avocado, and salsa.Fruit salad for breakfast.
