Hi friends!
I don’t often post many sweet recipes but this one made me reeeeally happy. I was craving s’mores and figured, why not cookies? I turned to my favorite chocolate chip cookie recipe and made a few tweaks and they came out fantastic.
So ooey and gooey and satisfying if you really need to feed your sweet tooth. They are quite a treat! Whether you bring them to a cookout in the summer or add to your Christmas cookie routine, these are sure to wow your guests. No one in a million years would ever know they were vegan.
Let’s impress some folks.
Recipe
Oven: 350 F
Bake Time: 15 minutes
Makes: About a dozen
You will need:
- 1/2 cup Earth Balance butter, softened
- 1/2 cup coconut sugar
- 1/2 cup brown sugar
- 1 flax egg
- 1 tbs vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups flour
- 1/2 cup chocolate chips
- 1/2 cup vegan mini marshmallows (Dandie’s are my favorite)
To make:
- Preheat oven to 350 F and prep your cookie sheet with parchment paper or non-stick spray and set aside.
- In large bowl, mix butter and sugar until fluffy. Add vanilla and flaxseed until well combined.
- Add salt, baking powder, and baking soda – mix well.
- Add 1/2 cup of flour at a time to bowl, mixing well after each one.
- Fold in chocolate chips and mini marshmallows.
- Roll dough into balls and adding to baking sheet. Try to keep the marshmallows on the inside of the dough while rolling. If they are on the outside or underneath, the marshmallow tends to run (it isn’t a huge problem but just a note).
- Bake for 15 minutes.
- Allow to cool before eating.
