Eeeeeee! Christmas cookies! Our house is always a cookie factory during this month. I can’t stop baking to save my life. Growing up, my mom was always putting together huge Christmas cookie trays for friends and family. I remember helping her make dozens and dozens of different kinds. It is a highlight of my childhood and I hope to pass the same onto my girls.
When I first started eating vegan, I was afraid I wouldn’t be able to enjoy the holidays as much but that couldn’t be further from the truth. I have found easy ways to veganize my favorite classic Christmas cookie recipes and they are just as delicious and nostalgic. So rest assured – these cookies are not healthy or boring or flavorless. They are THE REAL DEAL!
While I am always trying new recipes each year, these are the four that I make no matter what. If I am putting together a cookie tray, these will all be on there. Because they are just the best (in my opinion!)
1. Peanut Butter “Blossoms”
I know these don’t have the “blossom” because there are no vegan KISS candies and I am too lazy to make my own. But I promise, any dark chocolate will do!
2. Italian Anise Cookies
These bring all the nostalgia for me. They are exactly as I rememeber them.
3. Butterballs
What’s better than a cookie made entirely of flour, butter, and sugar only? These are dangerous in the best way.
4. Peppermint Oreo Balls
A really easy one that the kids will love (and anyone who has tastebuds). Just use your favorite vegan cream cheese!
