We love this recipe.Peanut butter curry over brown rice with some avocado.Buffalo chickpea salad over lettuce with some avocado, sweet potato, and cashew ranch.Vegan veggie quiche with avocado and some berries.Vegan meatballs, mashed potatoes, corn, and string beans. Simple dinner!Baked zucchini oatmeal with peanut butter and banana.Brown rice, sweet potato with cinnamon, baked tofu, and string beans. A little drizzle of maple sriracha.Date candies!Roasted cauliflower, corn, bok choy, and mashed potatoes.Broccoli cheddar soup and steamed kale.Brown rice with lentils, grilled peppers and onions, and broccoli rabe.Strawberries and watermelon.Red lentil pasta with broccoli, zucchini, summer squash, olive oil, and nutritional yeast.Black bean and sweet potato enchiladas with side of corn and salad. Cashew cream on top.Burrito bowl with brown rice, corn, black beans, roasted sweet potatoes, corn, and guac.Breakfast is Just Egg, toast, steamed asparagus, and fruit salad. Berry iced tea.Garlicky bok choy.Vegan chik’n noodle soup. Same recipe but just swapped chickpeas for vegan chik’n.Tofu parm, rice with lentils, bok choy, and brussels sprouts.Vegan caesar salad with roasted chickpeas and cauliflower.
