The Easiest Vegan Broccoli Cheddar Soup

Soup season is the best season! I posted about this soup in my stories one day and it generated a lot of messages and interest. I am not surprised because really… who doesn’t love a good broccoli cheddar soup? Especially when it is vegan and 10 x’s healthier… and just as delicious.

This is such an easy recipe and it is packed with a ton of veggies, b12, healthy fats… which makes it a great meal for kiddos, too.

So get in your coziest clothes, put on some good music, and let’s make this hearty soup.


Recipe

You will need:

  • 1 tbsp olive oil
  • 1/2 cup sliced onion
  • 2 cups broccoli, fresh or frozen
  • 1/4 cup diced red pepper
  • 1 carrot
  • 1 small potato
  • 1 can full-fat coconut milk
  • Water or veggie stock, as needed
  • Dash of: onion powder and turmeric
  • 1/2 cup cashews
  • 1/4 cup nutritional yeast
  • 1/4 – 1/2 cup shredded vegan cheddar cheese
  • Salt and pepper, to taste

To make:

  • In a large pot over high heat, add olive oil and veggies – allow to cook down and sauté for about 5 minutes.
  • Add coconut milk . You want to just about cover the veggies, so if there is still some room, add a little water or veggie stock. Season with a little onion powder and turmeric, cover, and bring to a boil.
  • While that is boiling, add cashews and nutritional yeast to your blender or bullet with about 1/3 cup hot water and blend until smooth – no chunks!
  • Once soup is boiling, turn down to a simmer, add cashew cream, give it a good stir and allow to simmer for about 20-30 minutes, until veggies are soft and cooked.
  • Once done, grab an immersion blender (or you can use a regular blender… whatever you have in your kitchen). Before you start, you may want to use a ladle to take some of the liquid out and put into a small bowl. I do this to make sure the soup doesn’t come out too “soupy” and I will slowly add the liquid back as needed.
  • Once you have blended to a consistency you like, add in your vegan cheddar and season with salt and pepper to taste.
  • Serve with a nice chunk of crusty bread!

  1. do you need to cook the potato beforehand? or does it just go in the pot cut up with the other veggies? I didn’t see any instructions about that.

    1. I didn’t cook before, just threw everything in the pot! I do dice it up small so it doesn’t take too long to cook :) I hope you love it!! xo
