Hi friends! Lots of food inspiration below. My meals lately have been simple and refreshing as the weather continues to warm up. I have been on a kale salad kick like crazy (not complaining!) I hope you enjoy the ideas. x
Cashew curry over brown rice.
Fruit salad for snack.
Stuffed artichoke … omg. One of my favorite foods ever.
Falafel wrap picnic with the fam.
Pinto bean tacos and all the veggie sides. Lime cashew dressing.
Vegan caesar salad with roasted chickpeas.
Burrito bowl for lunch. Brown rice and lettuce base and topped with pinto beans, guac, corn, tomatoes, lime, and a cashew sriracha lime dressing. Recipe in my new ebook .
Sweet chili stir fry over brown rice and topped with tofu and sesame seeds. Recipe is similar to this one .
Dill vegetable chowder . A must year-round in this house.
Garlicky bok choy, brown rice, and turmeric tofu.
Messy kale, carrot, and avocado salad with a lemon cashew dressing. Also lots of nutritional yeast!
Red lentil and TVP bolognese. Recipe is in my new ebook :)
Roasted sweet potato over lettuce and topped with corn, pinto beans, hot sauce, and lime cashew dressing.
Chocolate granola, bananas, peanut butter, and almond milk. Granola has been my jam for breakfast lately.
Tofu scramble, avocado toast, leftover roasted veggies, and fruit salad.
Baked sweet potato, couscous, and roasted veggies.
Banana nice cream, berries, chocolate granola, and peanut butter drizzle.
Veggie rolls with a spicy peanut dipping sauce.
Roasted cabbage over couscous and a little side of mashed avocado.
Same granola situation as above.
Salad with beans, corn, guac, hot sauce, and cashew lime dressing.
Blueberry crumble. This was so good and the recipe was by Nikki Vegan.
Banana nice cream with a chocolate date syrup drizzle and more granola.
Kale and iceberg salad with corn, avocado, and the usual cashew lemon dressing. And all the nooch.
