Who has been berry picking this season? This is one of my favorite summer activities – strawberries, blueberries, blackberries… whatever! It’s so much fun and always ends with something sweet and delicious in the kitchen.
One of my favorite ways to use berries is in my oatmeal. I love topping them with the warmest and jammiest syrup… ugh it is like dessert for breakfast. If you are like me, I think you will love and appreciate my fruits of the forest breakfast jam.


Recipe
You will need:
- 2 cups mixed berries (I use strawberries, raspberries, blackberries, and blueberries)
- 2 tbsp maple syrup
- Juice from 1/4 lemon
- 1/4 cup water
- 1/2 tsp cinnamon
- Pinch of salt
- 1 tbsp corn starch
To make:
- In a pot over high heat, add berries, maple syrup, lemon juice, water, cinnamon, and salt. Give a toss and make sure everything is coated and bring to a boil.
- Once bubbling, turn heat down to low and take a little liquid out and into a separate bowl. Add corn starch and stir well so there are no lumps – add this to the rest of the pot again. This will thicken it up!
- Allow to simmer for about 20 minutes. Turn off heat and let sit for another 10 minutes.
- Store in a jar in the fridge for a few days to top your oats!
