Plant-Based Meal Ideas: What I’ve Been Eating Lately
Hi friends! It’s been a while since my last post like this… so there are a lot of older photos in here. Don’t be surprised to see summer dresses and fall meals – but food is food, right?! Haha
I have been compiling but so slowly. I took a little break from capturing food during the holidays. It can feel taxing sometimes to always take photos before eating! I feels nice to just make food and eat with my kids without rushing around for good light. I will do my best! But just wanted to be transparent because these posts may become a bit more of a bi-monthly or quarterly situation. We’ll see how things go.

Thai chili rice noodles with veggies and cashews.Linguini with garlic, zucchini, kale, and chickpeas.Escarole and beans and crusty bread.Vegan pot pie! I use the Nora Cook’s Vegan recipe.Ziti with broccoli and lots of nooch.My husband made a potato, black bean, peppers, and spinach hash which I then doused in vegan queso.Red lentil dal over basmati rice.Homemade granola with soy yogurt and bananas.Chickpea noodle soup with the addition of cabbage.Just egg & tempeh bacon breakfast sandwich from a coffee shop in Boston. SO yummy.Cinnamon apples and cherries over oats.Messiest photo of a delicious sandwich – tofurky, violife cheese, lettuce, tomato, and balsamic vinegar.My faaaavorite! Baked pb & banana chip oats.Burrito bowl with all the veggies and a sriracha-lime cashew dressing.Cinnamon apples and oats parfait, layered with coconut yogurt.Tempeh, mushrooms, and peppers over rice.Banana chip oats in a mug.Burrito bowl!
