I have a really simple recipe to share today but this one is long overdo. I often share my girls’ lunch plates and more often than not, they feature these cheesy tofu bites. We have them at least once a week and they are crazy about them. Lots of rejoicing on baked tofu day! And really, rejoicing for me, too, because it means a guarantee that they will eat their lunch and I am thrilled to get in a nice dose of iron, calcium, and protein.
They love to dip these babies in a ketchup/vegan mayo sauce or maple mustard. I usually serve with a side of fruit and veg (whatever we happen to have on hand) or maybe some olives, pickles, or pretzels/crackers. Sometimes I will give them a small tortilla and they like to make wraps themselves.
And hey, these are not only for kids! I love them on top of stir fry, in salad, in a wrap, on pasta, whatever. I make these very often and we have them in a whole wide range of ways. Very versatile and great for everyone.

Recipe
Oven: 400 F (convect is best if you have that option)
Bake time: 25-35 minutes, depending on how crispy you prefer
You will need:
- 1 block of tofu, with excess liquid gently squeezed out
- 3-4 tbsp olive oil
- 1/4 cup nutritional yeast
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- Sprinkle of salt
- Optional: sprinkle of pepper or dried parsley
To make:
- Preheat oven to 400 F.
- Line a baking sheet with a non-stick surface or spray non-stick.
- Start by squeezing out as much liquid as you can from the tofu. Do this gently by wrapping in paper towel or reusable towel and pressing down – but not too hard that it crumbles up.
- Cut tofu into cubes and add to a bowl.
- To bowl, add olive oil, nutritional yeast, garlic powder, onion powder, and salt. Toss gently with a spoon.
- Place tofu blocks onto lined baking sheet and spread out evenly.
- Bake at 400 F for 25-35 minutes, depending on how crispy you would prefer them – 30 min is a good sweet spot if you aren’t sure.
- When done, allow to cool and serve as is or with dip!
