Okay, I have finally perfected my chocolate chip cookie recipe and who knew the secret would be using oat flour? Crispy on the outside with a chewy center, slightly nutty flavor, and they come together so quickly. My entire family devoured these (my husband really couldn’t believe I used oat flour). Seriously, you just have to try them for yourself. I am officially done recipe-testing cookie recipes… these are IT!

Recipe
Oven: 350 F
Bake Time: 15 minutes
Makes: A little under 2 dozen
You will need:
- 1/2 cup Earth Balance butter, softened
- 1/2 cup cane sugar
- 1/2 cup brown sugar
- 1 flax egg (1 tbsp ground flax + 3 tbsp water)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 cup oat flour
- 1/2 cup white flour
- 1/2 cup chocolate chips
To make:
- Preheat oven to 350 F and prep your cookie sheet with parchment paper – set aside.
- In large bowl, mix butter and sugar until fluffy. Add vanilla and flaxseed until well combined.
- Add salt, baking powder, and baking soda – mix well.
- Add oat and white flour and mix until combined.
- Fold in chocolate chips.
- Roll dough into 1-inch balls, add to parchment paper.
- Bake for 15 minutes, or until golden.
- Let cool (or don’t) and enjoy!
