If you follow along with me on Instagram, you may have saw that I recently discovered I have a gluten sensitivity. This wasn’t too shocking (it runs in my family) but it has been a bit of an adjustment on my end. Thanks to all of you who reached out and shared all your favorite products, brands, recipes, etc. It has been so unbelievably helpful. So naturally, this next post includes meals that are both vegan and gluten free. If you are not gluten free, of course you can use whatever pasta/bread/flour you normally would to modify the below. I will share brands names and recipes that I use for those who are in the same boat as me. I hope that you enjoy the inspiration, regardless!
Air-fried corn tortillas topped with refried beans, corn, vegan cheese, lettuce, tomato, and salsa verde.Cream of spinach pasta. I used brown rice and quinoa pasta from Aldi and enjoyed it! My husband and kids liked the GF pasta, too… which is huge. Topped with vegan parmesan (love the recipe from Minimalist Baker).My favorite GF crepe recipe! For the filling, I cooked down cinnamon apples and topped with cocowhip.Cashew cream broccoli rabe pasta. Again, same brown rice and quinoa penne from Aldi.Hash brown bowl… really random. I added leftover canned lentils, corn, lettuce, queso, hot sauce…Rice with zucchini and chickpeas that was sauteed in tamari and garlic powder. Topped with tahini drizzle.Mug cake topped with jammy blueberries.Burrito bowl with black refried beans, corn, rice, lettuce, cashew sour cream, and hot sauce.Creamy red pepper pasta and spinach with Banza chickpea pasta (Cavatappi shape).Personal nacho plate with the same deal going on as before.Chickpea noodle soup with Banza chickpea pasta.Blended oats topped with caramel date sauce and maple chocolate sauce.Bowl with rice, corn, green beans, and tamari garlic tofu.Chickpea oat pancakes with jammy blueberries.Blended oats with cinnamon apples.Bean chili with rice.More crepes but these have bananas, strawberries, and chocolate maple sauce.
