Where are all the toast lovers? There are endless possibilities when it comes to toast for breakfast or a snack, and with a good bread as your base, it can be healthy and filling. Since having to cut gluten from my diet, I like to use O’Doughs sandwich bread best as well as crusty GF buns from a local bakery. However, if gluten isn’t an issue, Ezekiel or any sprouted bread is a great option. Or a nice thick slice of sourdough (which I miss so much).
So to inspire you to get fancy with your morning toast, here are 10 ideas. Today, it’s all about the toppings.
#1: Rainbow Avocado
Simply mash avocado with a bit of lime juice in a bowl – pinch of salt. Top toast with mash, tomatoes, and shredded red cabbage. Red pepper flakes for spice, if you like heat!
#2: Nutty Chocolate PB
In a bowl, mix a tbs of peanut butter or almond butter with 1 tsp of unsweetened cocoa powder. Add water or a bit of maple syrup for consistency (a little bit at a time) and top toast.
#3: Everything Bagel + Tomato
Find your favorite vegan cream cheese brand and top with that, tomato, and some everything bagel seasoning (from Trader Joe’s!) If you don’t have access to that, a little sea salt with do.
#4: Mashed White Bean & Avocado
I love a protein/iron/fiber boost from mashed white beans. Mash with avocado, slather on, and top with cucumbers for extra crunch.
#5: Sweet Berry + Avocado
Mash up an avocado and add some strawberry slices and shredded coconut for a sweet toast.
#6: Hummus + Seeds
Hummus, chia, and pumpkin seeds.

Hummus topped with a quick mix of olives, tomato, onion, and garlic. I tossed them with a little olive oil, salt, and pepper.
