Hello hello on this beautiful Sunday :)
I’m popping in with another weekly dinner menu. I don’t have much to say today except it’s hot and humid and cooking hasn’t been much fun, but we all still gotta eat so it’s been easy tried and true recipes/meals. I hope it doesn’t sound too repetitive but also… this is real life here, right? We eat a lot of the same things in rotation until we get sick of it and then once the season shifts, so do the meals.
Here’s the plan for the upcoming week when the temps are in the 90s.
Monday ~ Zucchini pasta because we have a few left until our plant has pretty much kicked it. It gave us many zucchinis since June though, so we are grateful!!
Tuesday ~ Loaded nacho night because it is really easy and minimal time in the kitchen.
Wednesday ~Grilled tempeh BLTs! I have been loving the Lightlife smoky bacon tempeh for this. My kids are not as big of a fan, so I might make a few chickpea egg patties for their sandwiches. Side of steamed green beans with tahini drizzle and chips.
Thursday ~ We’re supposed to see rain and thunderstorms on this day and if that is the case, I really want a pot ‘ol pot of lentil stew. I have been craving it like you wouldn’t believe. I’ll probably make grilled cheese sammies to serve alongside.
Friday ~ Impossible burger night with sides like corn on the cob, fresh cherries, tomato and cucumber salad, and chips/salsa.
