Who likes easy dinners that the whole family will love? I thought so.

Sure, there are tortilla chips under there but there is also beans (protein), vegan queso (healthy fat & veggies), guac (healthy fat), olives (healthy fat), vegetables & you know… salsa to top it because salsa is the best. Trust me when I say that your family will be very excited about nacho night.

It’s not rocket science to make nachos of course but I thought I’d share what our loaded nachos end up looking like for inspiration. You can add or omit whatever you want to cater to your family but that is the beauty of it – anything goes! If you don’t have corn, sub in some diced peppers. Or no black beans? Red or pinto work just as beautifully.

You can also make this a fun activity for your kids – have them help you to sprinkle on all the toppings. It’s a win for everyone.


Recipe

You will need:

  • Bag of tortilla chips
  • 1/2 cup Gardein beefless crumbles
  • 1 cup black beans
  • 1/2 cup corn
  • 1/2 cup olives, sliced
  • Vegan queso – recipe HERE
  • Vegan cheese shreds
  • Lettuce, chopped up small
  • Tomato, diced
  • Salsa
  • Vegan sour cream or unsweetened coconut yogurt

To make:

  • Preheat oven to 350 F
  • On a large baking sheet, line with tortillas and top with beefless crumbles, black beans, corn, olives, queso, and vegan cheese.
  • Cook in oven for about 15-20 min.
  • Once out, top with lettuce, tomato, salsa, and vegan sour cream.
  • Everyone dig in!

Enjoy your nacho night! I have a good feeling that these kinds of meals will be the ones that kiddos remember. x
