Eggless Vegan Breakfasts

Missing eggs from your vegan or plant-based diet? It’s understandable since eggs are a big part of American breakfasts. But the good news is that there are so many substitutes that can help you curb your egg craving – it’s not all tofu! I’ll share some tofu recipes below, but in addition, there’s the JUST Egg product and chickpea flour…. or nixing the subs all together and making something completely new (see my sweet potato burrito below).

Whether you are new to the no-egg-way or are bored with your plant-based breakfasts, maybe the below will inspire a bit. And if you are wondering about why I don’t eat eggs, you can read more on my choice here. But onto the recipes!

#1: Tofu Scramble

Kicking things off with a classic. This tofu scramble above is loaded with goodies, but you could also make a very simple recipe (like this one). Sometimes simple is a good approach (especially if you have littles!)

#2: Chickpea Flour “Egg” Sandwich

This is a new favorite of mine. Don’t go into it expecting egg consistency and flavor (this is in no way that) but it IS delicious and has become a breakfast staple around here. If you want it to be exactly like an egg, see below when you get to the JUST Egg recipe.

HOWEVER, if you do want to try this recipe and would like more of an egg flavor, add a little black salt. I am not a fan of it (because I really don’t miss the eggy taste) but it is known for its similar smell and taste.

#3: California Breakfast Sandwich (Made with Tofu)

Seasoned tofu, avocado, and vegan cheese. It’s pretty much all you need for an amazing breakfast.

#4: Tofu Breakfast Burrito

Breakfast burritos are at the top when it comes to my morning fave. This one is loaded with a simple tofu scramble, spinach, salsa, vegan cheese, avocado, and vegan sour cream.

#5: Tofu-Free Breakfast Burrito (Made with Sweet Potato)

So this isn’t an egg at all, but this is for the person who wants something savory for breakfast without the tofu or egg-substitute. It’s hearty, unique, and delicious.

#6: Breakfast Tacos or Burritos with JUST Egg

It’s undeniable that the JUST Egg is the most egg-like product on the market. I am a big fan but we don’t have it often (it is a bit pricy). But if you do go for it, give tacos or a burrito a go. Just prepare the product according to package and jazz it up with extras.

The taco has avocado, corn salsa, and vegan sour cream.

The burrito has black beans, guacamole, vegan cheese, salsa, and vegan sour cream.

#7: Tofu Quiche Breakfast Sandwiches

HOWEVER, I love it so much that I have to share her link and include here because I make these ALL THE TIME and they are the perfect size for an english muffin breakfast sandwich. I like to make mine with broccoli & vegan cheddar cheese and then add hot sauce and hummus on the english (above).


So there you have it! There’s an eggy option for everyone, whether you like tofu or not. I hope that at least one of these speak to you.
