Here’s a good chunk of things that I have been eating lately as a nursing vegan mom. A lot of hearty meals, to be honest. I am exclusively pumping for my daughter and it is no joke… I always need fuel. I hope you enjoy the hearty postpartum meals ideas!
1/2 grapefruit to start the day.TVP and green pepper tacos with a side of friesssss.Couscous, bbq chik’n, and veggies.Hummus and lettuce sandwich. Simple but good stuff.Escarole and beans.Couscous tossed with broccoli, potatoes, olive oil, and nutritional yeast.Fruit for breakfast.1/2 grapefruit, 1/2 hash brown, avocado, and veggie & tofu quiche.Some kind of taco… I actually can’t remember exactly but I think it was TVP, green peppers, and onions. Fries too.Kale pesto!Cheerio treats! I shared the recipe for these on my IG.Bean & cheese quesadilla night with all the toppings. Pizza night from Blaze!Boca chik’n patty, pearl couscous, mashed potatoes, and a ton of veggies.Penne with peppers, onions, and vegan meatballs (TJ brand!)Cauliflower tacos with black beans, rice, corn, etc. etc.Butternut squash. Couscous with spinach, peas, and red onion.Autumnal bowl – lentils, sweet potato, butternut squash, and rice.Walnut pesto macaroni!Chocolate pumpkin overnight oats with some walnuts.My aunt brought over some spaghetti with olive oil, tomato, and basil. Topped it with nooch. YUM.English muffin with PB + banana.I made a vegan crunch wrap supreme… you know I’ll be sharing this recipe eventually.Buffalo tempeh sandwich.Savory knot from Wildflour – brought over from our friends, Lynn and Sean!I made a vegan caesar salad with roasted chickpeas, homemade croutons, and pumpkin seeds. It was so good – Joe LOVED it, too.Amy’s lentil soup topped with some rice.Homemade banana bread + baby wearing.Lentils, mushrooms, peppers, and meatless meatballs.Butternut squash… feeling like fall over here!Esacrole, garlic, and cannellini beans. This recipe is in the archives – search “escarole”English muffin topped with some chocolate almond butter, which is just almond butter, cacao powder, splash of almond milk + maple syrup combined.Smoothie is banana, strawberry, peanut butter, cacao powder, and almond milk. And a really cute pair of legs.Coconut lentil stew on a cozy October day. I’ll be sharing this recipe soon.More escarole + beans with some bread to dunk. The best part, clearly.A veganized American chop suey for dinner!English muffin with tofutti + everything bagel seasoning.Korean Tempeh Tacos from Garden Grille – we went for our first wedding anniversary!Vegan reuben sandwich from Garden Grille. This was LIFE. Made with seitan.English muffin with half almond butter, half vegan chocolate hazelnut spread (I have the one made by Endangered Species Chocolate).Almond butter toast with a drizzle of the chocolate hazelnut spread + bananas.Some veggies with freekeh + lentils.Tea season!Quick leftovers for me before Willow wakes up – the remaining lentils + freekeh.Hodge podge for lunch – onion, green beans, green pepper, and kidney beans. I seasoned with smoked paprika.Joe made me this vegan tortilla pizza with homemade marinara and Follow Your Heart cheese. It was SO GOOD and crispy!This quick burrito is just rice, lentils, kidney beans, vegan sour cream, and hot sauce.Curry rice + veggie mix (my mom made this for me while she was babysitting, weeeee) and some spicy roasted cauliflower.Another day, another burrito. The filling is zucchini, onion, lentil, and couscous with some vegan sour cream and hot sauce. I made too much filling, which is on the side!Vanilla soy yogurt with pb + chocolate chunks for a sweet snack.Sesame bagel with vegan cream cheese, hot sauce, and everything bagel seasoning (from Trader Joe’s)!Asian sesame noodles – my aunt always makes this for me, and I am obsessed with it. It’s super simple and filling!Breakfast burritos are my forever jam. This one has lentils, rice, broccoli, lettuce, tofutti cream cheese, and hot sauce.Chocolate strawberry banana ice cream with a swirl of cocoa syrup (made easily with just a tbs of cocoa powder and some maple syrup!)Mango and orange slice midday snack.I made these BBQ jackfruit nachos for joe and my brother. They are piled with black beans, corn, olives, vegan cheese, and vegan sour cream. YUM.New Year’s Day breakfast was this tofu + vegan sausage breakfast sandwich. I used the Lightlife sausage roll and shaped them into patties. Kinda a last hurrah – my resolution is to eat less mock meat products.Garlicky broccoli rabe with olives, served with pasta.Quick salad topped with red pepper, carrots, scallions, rice, and lentils. Spicy hot sauce dressing.Peanut lentil stew – hoping to share this recipe with you guys soon.Lentils, rice, veggies, and tahini.Side salad with spicy tempeh.Warm oats + thick chocolate pb banana “nice cream.” The contrast of temperature is soooo good. Topped with frozen blueberries, cherries, and some agave.Broccoli rabe and pasta, again.Pickled veggies for a quick snack.Loaded veggie wrap – this one has avocado, spinach, tomato, carrots, olives, hummus + hot sauce.Another day, another wrap.Vegan donuts for my birthday. Weeee!Steamed kale for breakfast.Buffalo chik’n wrap.Tofurky with some lettuce, tomato, and just mayo. And a little bit of avocado.Loaded avocado toast. Topped with tomatoes, cucumbers, and spinach… also added a generous amount of hot sauce later ;)Avocado with hot sauce.Steamed garlic kale and avocado.Tempeh with a side of mashed potatoes and peaaaaas.Hummus toast with avo.Burrito for lunch. Fave.Linguini tossed with kale, tomatoes, garlic, and hummus.More hummus toast with avocado, and the addition of hot sauce.Acai bowl.The worst picture, but the best bedtime snack. Date with a chocolate chip in the middle with PB for dipping.White bean salad sandwich.Quinoa with tomato paste, onion, peppers, and kidney beans.Carrot salad with a side of rice.PB toast.Mac and cheese from bychloe – omg.And I also got a burger + fries… because it was birthday dinner date night. so regrets. this burger was phenomenal.Roasted cauliflower + side of carrot salad.Tempeh wraps.Acai bowl from Shayna’s Place.Falafel bowl featuring couscous, cukes, tomatoes, sweet potato, tahini, and hummus.Oranges are my favorite snack before bedtime!Roasted tempeh sandwich for lunch.When you make a smoothie with cherries, mango, and spinach…. it comes out this color. Not all meals are pretty.Lentil stew + rice.Breakfast platter!BBQ chickpea bowl with rice, lettuce, avocado, and sauerkraut.Acai bowl topped with granola, mango, strawberries, coconut, and cacao nibs.Tofurky, lettuce, hummus, and mustard sandwich.Warm cinnamon oatmeal with chocolate pb smoothie. Topped with some pb, granola, strawberries, and banana.Chik’n and avocado tacos with hot sauce and spinach.Chocolate raspberry oats!
Meals I Ate While Losing Weight Postpartum
Some inspiration for meals when I was actively trying to lose weight once my breastfeeding journey ended.
Hummus wrap with swiss chard, tomatoes, cucumbers, and broccoli.Mushrooms are life.Romaine, kale, and swiss chard salad! A lemony cashew cream dressing.Nourishing bowl for lunch with some spinach, broccoli, sweet potato, rice, avocado, and lemon.Lentils for life.Mango, grapes, and strawberries with unsweetened coconut shreds.Zoodles with a quick tomato sauce (bulked up a bit with black beans, peas, mushrooms, onions, and cayenne pepper).Avocado and hot sauce.Cinnamon oatmeal with granola, berries, and pb.Loaded baked sweet potato! This has some sautéed kale, black beans, mashed avocado, lime, and tahini drizzle.Mushrooms, avocado, and spinach.Big salad with a tahini lemon dressing.Chocolate overnight oats topped with almond butter and strawberries.Quick burrito bowl for dinner.Cooked carrots + leftover mashed avocado.Lettuce wraps featuring kidney beans/tahini mash with some sweet potato chunks, rice, and tomato.Oatmeal topped with almond butter and strawberries.Toast with pb (mixed with a bit of cocoa powder and almond milk… yum)The making of roasted veggies. Instead of oil, I just use a non-stick baking sheet (like this) and season with salt.Rainbow rice rolls! Ughhh these were so good. I served with a spicy peanut sauce.Avocado toast! Topped with some purple cabbage (looks like flower petals… love that) and tomatoes.Roasted veggies, rice, and lentils.Date, banana, almond milk, and cocoa powder smoothie.Again… this chocolate almond butter toast is life.Zoodles with marinara and nooch.Mmmmm you know.I can’t stop eating these to save my life.Leftover rice wraps for lunch with a side of steamed broccoli.Leftover rice, roasted veggies, salsa, and guac.Almond butter + cocoa powder mixed well on toast.Whattaya know – more chocolate oats.Tea before bed.Chocolate oats drowning in almond butter.Lentil stew and hummus pasta.Butter bean + veggie “scramble” with avocado and hot sauce.Warm quinoa salad… need to share this recipe soon.Soy capp.Snacking on mango and strawberries.Another morning, another bowl of chocolate and almond butter oats.Another warm quinoa salad for me.The same as above, but messy messy. It doesn’t stay pretty and styled and long!!Quick spinach + romaine salad tossed with lemon and topped with avocado, chickpeas, olives, and tomatoes.Dark chocolate oats.This mediterranean quinoa salad was soooo good.
