Vegan Chik'n & Cranberry Salad Sandwich

Hi friends!

Easy lunch recipe for you today. You know I am all about those quick and easy lunches that take no time to throw together. Honestly, I personally do just not have the time for anything other than that these days.

The star of the sandwich is Gardein chik’n tenders but you can use whatever mock chik’n you like. If you are not into mock meats, this would also be awesome with mashed chickpeas. Sub in what you want – you do you.

The cranberries give it a subtle sweetness and the lemon brightens up the salad very nicely. I could eat this everyday with a side of veggies and/or fruit and be good to go. I hope that you enjoy it, too.


Recipe

You will need:

  • 3-4 Gardein chik’n tenders (cooked according to package)
  • 1/2 stalk celery, diced small
  • 1 tbsp dried cranberries
  • 2 tbsp vegan mayo of your choice
  • Quick squeeze of lemon juice
  • Salt and pepper, to taste
  • Sandwich bread

To make:

  • Prepare your Gardein chik’n according to package.
  • While chik’n is cooking, add your diced celery, cranberries, and vegan mayo to a small bowl.
  • Dice up your chik’n into small pieces and add to bowl.
  • Squeeze lemon and sprinkle salt and pepper – mixed/mash everything together.
  • Add to your bread of choice and enjoy.

The beauty of this sandwich is that you can add whatever you’d like – walnut would be great in this or even grapes instead of cranberries. Or raisins, maybe? See what you have in your pantry and play around with it.

I haven’t let my toddler try this yet but I have a feeling she would like it. I would probably dice up the celery much more fine for her to avoid any choking hazards, but other than that, this would be a great sandwich for plant-based kids, too.
