Sounds like a weird combination right? It’s amazing. I’m a lover of cauliflower and pistachios, so this just made sense. I also had a bit of broccoli leftover, so I just tossed it in. The result? Amazing.
The Recipe
You will need:
- 1 head cauliflower
- 1/2 cup broccoli florets
- 1 onion, sautéed
- 2 cloves garlic, sautéed
- 1/3 cup unshelled pistachios, ground
- Olive oil, just a drizzle
- 1 1/2 – 2 cups soy milk
- Salt and pepper
- Nutritional yeast – optional
- Extra pistachios for garnish
Step 1: Veggie Prep and Steam
Let’s be real: Veggie prep is always step one. Good thing I like it! Cut cauliflower and broccoli heads however you like, because you will just be steaming them. I simply add them to a pot of hot water over stove, high heat. Chop onions and garlic, put aside.
Step 2: Sauté and Un-shell
While the other veggies are steaming (about 10-15 minutes), sauté others until translucent. Take off heat and add to food processor.
Veggies still not steamed? I cracked open my pistachios and ground them in my Magic Bullet.
Add Everything to Food Processor
Well, this is simple! Add it all. I really apologize for this picture, too. I forgot to take it the first round – whoops! So, it’s a little messy, but isn’t the kitchen always messy? ;) Also, I am doing this in a Magic Bullet. Don’t judge me.
Once smooth, I added mine to another pan on the stove to simmer and keep warm.
Just some notes: You can add as much or as little of the spices as you want. Same with olive oil. I went with about 2 tbs. As for soy milk, just eye it. If you like a thicker soup, just add the lesser amount! As for nutritional yeast… I really wish I was a fan! I omit it because I have not acquired a taste for it yet, but I know there are probably some readers who want that cheesy taste. Feel free to improvise!
