Avocado Rice Cake

My new go-to snack… I can’t stop! I never liked rice cakes as a kid, unless they tasted like dessert or something. But lately, salted rice cakes are my jam. A little lemon avocado on top, and you just upped its health benefits game.


And when I say health benefits, I mean major health bennies. Take a look at some of these reported claims:

Avocado:

  • Moisturizes skin
  • High in essential vitamins and minerals, including potassium, vitamin K, fiber, and folate
  • Improves absorption of nutrients
  • Helps maintain cholesterol
  • Provides good mono-saturated fats
  • Balances hormones
  • Strengthens immune system
  • Promotes good bone health
  • Aids in weight loss
  • Regulates blood sugar levels
  • Good source of antioxidants
  • Promotes better eye health

Lemon:

  • Relieves indigestion
  • Helps control high blood pressure
  • Provides relief from fever and colds
  • Cleanses teeth
  • Good source of vitamin C

Top with tomatoes, because I mean… hello, best pairing ever. And I don’t just mean taste. The healthy fat in avocados is believed to help the body absorb more lycopene, the antioxidant compound that gives red, orange and yellow produce its coloring. According to research from Ohio State University, “when avocado was added to salsa, people absorbed more than four times the amount of lycopene than from salsa without avocado.”

So basically, this is a winning snack. Here’s how to make…

The Recipe

You will need:

  • 1/2 avocado
  • 1 tbs lemon juice
  • Dash of salt, pepper, and red pepper flakes
  • 1 rice cake
  • Tomato – your choice! I went with heirloom ;)

Simply mash your avocado with lemon and seasoning. Top off your rice cake with avo and tomato goodness. A filling and healthful snack! xx bianca

  2. That looks like a great topping for about ANYTHING! I’ll have to try it on Wasa flatbreads- my current go-to crunchy snack! :D
