What I Eat As A Breastfeeding Vegan Mom

Hi guys – easy recipe to share today because it takes under 20 minutes to make, and tortilla pizzas are my new favorite thing. So much easier than rolling out dough when we want something pizza-like but quick. Ha! I’m also on a major pesto kick and have been making it in large batches and freezing as I go. I love having it on hand for a variety of things – from bowls to pizzas to pasta and beyond.

And as always with pizza, you can add as little or as many toppings as you’d like. You’ll see what I added below, but go nuts. I’ve made this with asparagus, mushrooms, and onions in the past, too. All awesome (especially the asparagus!)

Recipe


Oven: 400 F
Bake Time: 10-15 min

You will need:

  • Large tortillas
  • Pesto – my recipe here
  • Grape tomatoes, halved
  • Gardein chik’n, cut up
  • Shredded vegan cheese (optional)

To make:

  • Line a baking sheet with foil and fit as many tortillas as you can. Spray with a bit of olive oil cooking spray (not necessary, but if you want some crisp).
  • Spoon and spread a layer of pesto on tortilla.
  • Top with: grape tomatoes, gardein chik’n, vegan cheese.
  • Bake in a 400 F oven for about 10-15 minutes, or until golden.
  • Cut up and serve.

Really simple stuff, but I wanted to share in case this looks good to anyone. It is so quick and easy for those nights that you don’t have the energy to make much (especially if you already have pesto made (like me). I hope you enjoy it! xx bianca
