Pasta e fagioliPulled jackfruit sandwich with roasted potatoes.Oof, a vegan skillet cookie with some cashew ice cream on top. This was a crazy cheat night for my husband and I. So good, but… oof.Chocolate oats and cherries.Refried bean + potato bowl with rice, salsa, and lettuce.Tempeh + black bean burger from my favorite vegan spot with a side of vegan sour cream, salsa, and slaw.Cashew cheese pizza nights are the best nights.Salted chocolate caramel smoothie. It’s made with dates, frozen banana, unsweetened cocoa powder, almond milk, and a pinch of salt.Slow cooked black beans, rice, and butternut squash.Chocolate cherry and banana oats.“Sausage” and peppers made with Field Roast mock meat. Some butternut squash and rice.Lentil stew and rice. I’ve been in a kick with this lately and Willow also really likes it. So we’ve been eating it A LOT.Rice bowl with slow cooked black beans, avocado, and hot sauce.Lentil stew + rice for dinner.Pasta salad with artichoke hearts, tomatoes, and kalamata olives.Tofu scramble breakfast burrito.Another day, another cashew cream-filled burrito. This one has rice, pinto beans, sweet potato, green peppers, and lettuce. Hot sauce always.Coconut lentil + kale stew.This burrito is swimming in cashew cream and it is fine.Chocolate + cherry oats.Black bean and rice burrito bowl with some roasted butternut squash, lettuce, and hot sauce.
