7 Realistic + Easy Breakfasts for a Vegan/Plant-Based Toddler

During the morning rush, I love nothing more than serving a fast and easy breakfast. The majority of us mamas do not feel like spending more than 20 minutes preparing breakfast, yeah? Or even more than 10 minutes, to be honest.

I feel like there is a misconception that it is hard to prepare breakfast for a vegan/plant-based kiddo because you know, *no eggs*. I have to laugh a bit because so many people are shocked that I don’t serve Willow eggs. I didn’t think it was that big of a deal. And to be honest, she isn’t missing out on anything. We have so many easy, healthy, and realistic go-to vegan breakfasts. I wanted to share some of our favorites below in case any of you mamas are looking for inspiration or ideas. These range on the scale from “takes two seconds” to “this might take you 15 minutes.” But honestly, anything under 15-20 minutes is good by me.


#1: Pancakes

This one is cheating a bit because I make these ahead of time, but once you get through making a large batch, you have sooo many pancakes to freeze for use all week and possibly into the next week. It is so worth it.

Willow eats these pancakes probably 4 out of 7 days a week. I am just really happy to serve something with minimal ingredients and the fact that the base is oatmeal is another plus. I also will add a handful of spinach every once in a while to sneak in some extra greens. You can’t taste the spinach at all, trust me. I will usually top with some almond butter or date syrup. I also serve with a side of fruit, like cinnamon apples or blueberries.

#2: Almond/Peanut Butter Oatmeal

Quickly prepare oats according to package and mix with some almond or peanut butter and a bit of cinnamon. Serve with a side or two of fruit. Violà.

#3: Avocado Toast

Whole wheat toast with some mashed avocado on top. Sometimes I get fancy and add a bit of lemon and nutritional yeast to the mashed avocado. Serve with a side or two of fruit.

#4: Blueberry Muffin

Another make-ahead recipe (usually make the night before) but again, once you make a large batch, then you can store some away for rest of week and freeze more than half the batch. Just nuke them for about 30-60 seconds and you have the quickest breakfast ever. Totally worth the extra effort for a ton of pre-made breakfasts.

I love this recipe by Beaming Baker and will usually serve one of these with a side or two of fruit.

#5: Tofu Scramble

I shared this recipe in the past and still swear by it. No need for eggs when you get the same effect and protein from a quick tofu scramble. It takes maybe 15 minutes. Serve with avocado and a side of fruit.

#6: Frozen Waffle

If you are really strapped for time, keep a box of frozen waffles on hand. Easy to pop in the toaster and serve with a side of fruit and some coconut or soy yogurt to dip.

#7: Green Smoothie

Another fast breakfast that can be loaded with greens and good stuff. I like to add 2 types of fruit, a handful of greens, flaxseed or chia, and almond milk (and sometimes a date to sweeten up). You could also add in some nut butter for protein. So easy!
